I did my organic produce delivery today, have to figure out how to cook beets. You cook them right? I don't like them but Jackson might (they are purple, his fav colour). I love getting so much healthy stuff but really need to do better cooking it all up and using it. He was so excited to see apples in the box lmao, easy to please that kid :)
I love beets! I always read so many tips on how to peel them easily, but they never work for me, lol. Lately, I've been roasting them in a pan with a little olive oil and black pepper, letting them cool, peel then add to my salads.
But.. I will also boil them and eat hot.. I just know that I will have pink fingers for a day or two afterwards! (Darn beet juice stains everything!)

Try peeling them and quartering them and then roast with olives oil, salt and pepper YUMMY. Red hands yes but worth it :-)
