Cheerios and milk with a banana
I LOVE anything Pancakes & Peanut Butter!!
I've included one of my favorite recipes... this is how I typically start my day :)
Gluten Free Pumpkin & Matcha Spinach Pancakes
Ingredients:
- ½ cup pumpkin puree
- ½ tablespoon matcha powder
- 1 cup fresh spinach
- 2 egg whites
- ½ cup unsweetened almond milk (start with 1/3 cup and add remainder if you find the mixture is too thick)
- 2 tablespoons coconut flour
- 1 tablespoon ground flaxseed
- 2 tablespoons protein powder (I use Dymatize ISO-100 Vanilla)
- ½ teaspoon baking powder
- liquid stevia (2-6 drops, adjust according to taste preference or omit entirely)
Preparation Method:
- Combine fresh spinach & 1/3 of the cup of unsweetened almond milk in a blender, blend till smooth.
- In a bowl combine ground flaxseed, protein powder, coconut flour & baking powder.
- In a separate bowl combine egg whites, pumpkin puree & stevia. Stir in spinach & almond mixture.
- Add the wet mixture to the dry & stir to combine. If you find the mixture is too thick you can add the remaining almond milk that was set aside earlier.
- Heat pan or griddle, spray with non-stick spray.
- Drop mixture into the pan or onto the griddle, (usually ¼ cup per pancake) & cook until the bottom is light brown (2-5 min, keep an eye on them) flip when desired color is achieved.
- Top with Maple Bacon Monkey Butter or other topping of your choice.
Today I had a toasted bagel with peanut butter. I made a strawberry fruit smoothie to go with it (frozen strawberries, a little bit of banana, orange juice concentrate, cinnamon, raw whole chia seeds, vanilla yogourt, and milk).

Today was our Sunday breakfast :) I'm so sick of us paying 40$+ to go out when I make better breakfast... We had waffles with berry coulis and homemade whip. Oh yeah and chocolate chips in te batter .

My juicer made me apple raspberry juice. (Holy crap you need a lot of fruit to get a full glass of juice)
This morning was baked pumpkin oatmeal :P which is shocking cause I HATE oatmeal ;)

Sunday breakfast today was rainbow pancakes . DD was ALLLLLL over them . She loved it sooo much !

Gah, haven't felt like breakfast food much lately, usually I've just been having soda crackers...
This morning, however, I realized there was a McCain coconut cream pie in the fridge - and THAT was appealing to me, so I'm having a slice, lol!
