switched things up today, thought I'd try @Lynn49 's cottage cheese pancakes, but of course forget where that recipe was posted. So an internet one to the rescue! Was able to make 6 x 2.5" rounds.
Batter was made in the magic bullet.
Blend these ingredients together first till smooth
-1.2 c fat free fat cottage cheese
-4 egg whites
-1/2 tsp each baking powder and vanilla
-dash of both cinnamon and stevia,
Then add -
1/2 c large flake oatmeal and pulse a few times, recipe says you need it to be a bit lumpy
After they were cooked I stirred
-1/2 c 0% fat Greek yogurt
-1 Tblsp Pure Maple syrup
in a separate bowl and topped blobs of it onto each pancake!! OMG they tasted better than blintzes!!
Eating all 6 as one meal cost me 9.5 Smart Points but I was too busy making yummy sounds to care!
Aren't they the best, Walkonby??!! Adding the oatmeal is a great idea to help it set up a little better....I thought it tasted like cheesecake in the morning! :) I've used l.f. Greek yogurt with a little sweet n low before on desserts, but yes! It would be great on those...let's call them blintzes! :)
I've had them with sugar-free jam before, so that's a nice touch, too..Oh! I have thawed frozen strawberries in the fridge!! They'd be great on them!!

You know, Davetherave,....weeks ago I may have been jealous, but knowing what that does to one's body is just :yikes:. Eating things that mostly don't have scientific labels telling you what you're taking into your body doesn't thrill me anymore. Not that I won't have a sweet treat now and then...but it'll be something homemade so that I know what exactly went into it. Actual food. :tongue:
Here are some interesting details about your HoneyBun: just the 35% saturated FAT is enough to scare me off...my heart and liver don't need it one single bit. It's like: cut it into thirds, and just eat lard in place of one third of it. When you're young you can get away with things like that, but eventually..it catches up to you...:neutral:

Well, Sweets, I'm happy that I didn't scare you off. There are SO many great options for breakfasts...I'm on Weight Watchers, and I did have that western sandwich this morning: 2 eggs, 2 normal whole wheat toast, onions, green peppers....and some ketchup! :)
