I was a bit later getting back from the few rounds of stores to shop at, so breakfast became brunch. I bought a new brand of gluten free tortillas and used 2 of them to make a scrumptious Quesadilla! Brushed the with bottom layer with salsa. filled it with thin slices of sauteed chx brst , mushrooms, green onions, red pepper and fresh grated Parmesan. Had a small bowl of salsa for dipping too.
