The last batch is just finishing up in the Air Fryer, but these meaty chicken thighs will be what the family is having for lunch today.
The only fresh veg we have remaining now is 1/2 bag coleslaw, i red pepper, 2 celery stalks and ....oh well I'll either be freezer diving or going out shopping.

Egg rolls. I made up a batch of 18 of them two days ago from leftovers. Bacon, chicken, onions, fried potatoes and lots of cheese. Only four of them left, and 2 for each of us is perfect.

DD made a soup the other day....she used a carton of Pho broth, sauteed chicken breast chunks, diced green onions, pepper, skinny noodles... I don't know what herbs she cooked the chicken in but it was a tasty soup!
I had my second bowl today for lunch.

Did up a bag and a half of store bought ( frozen ) perogies a little differently this time.
I boiled them the usual way till they rose to the top of the water BUT scooped out just a few at a time to drain, then plopped them ( so carefully ) into the hot oil I've been overworking trying to use up.
This should be the last thing I cook in that oil as all the spuds are gone, although.....hmmm I do have won ton and spring roll wrappers in the freezer and I read a recipe for meat egg rolls in one of the threads a few moments ago.
Anyways...did the perogies ever turn out amazing! NOT one busted open. They were pretty crunchy outside, warm soft, cheesy inside. DD is eating them cold from the fridge, after cooling I placed them all in a large ziploc freezer bag to try and keep them from getting too dry or hard.

homemade sub sandwiches with ham (on sale for 99 cents/100g), tomato slices, cheese and lettuce. Also made a trempette and celery sticks, carrot sticks, red pepper slices and cucumber slices.
