We like duck, i made roast duck with sour krout stuffing evry Christmas in addition to turkey. Anyway for lunch im making chopped eggs salad sandwiches.

I made french Onion Soup from scratch yesterday but wasnt very hungary so didnt have any. we are planning to have that for lunch with croutons and cheese!

recipe for French Onion Soup. Easy, if i can do it anyone can do it!! First time i made French Onion Soup; usually i would buy it at Costco. This turned out great and is really easy.
FRENCH ONION SOUP
2 tbsps butter or margarine
4 cups thinly sliced onions (about 2 lbs)
4 cans condensed beef broth (10 oz/284mL)or 1 tetra pack Beef Broth plus 1 can
1 can (10 oz) water (i used 1 1/2 cans)
1 tsp salt
1/9 tsp pepper
8 french bread slices, i inch thick (i used croutons as much as i wanted)
1/4 cup grated cheese (i used mozzarella)
Melt butter or margarine in large skillet. Add onions, cook over moderate low heat for 30 minutes, stirring frequently.
In large saucepan, combine onions, beef broth, water, salt and pepper. Bring to a boil. Reduct heat; cover and simmer for 1 hour. If you are using bread, toast the bread and put in bottom of large tureen or in individual bowls. (I used croutons and added them to the soup as needed). Sprinkle cheese on top and serve. (if you have French Onion Soup bowls, you can bake the soup with the croutons and cheese in the oven until cheese is melted and turns golden. )
