Still haven't eaten breakfast yet, but I paid just .65 for a tray of a dozen Indian eggplants off the reduced rack at NF yesterday. The recipe search began!
I had almost ALL the necessary ingredients here! The eggplants are in the last stages of simmering in the sauce as it ( hopefully ) thickens.
These ladies and their videos are wonderful! I got a kick out of their website name, reminds me of the famous line from the Jerry McGuire movie.

@walkonby i love eggplants too; there are 2 Chinese eggplant dishes that I love: shrimps stuffed eggplants (dim sum dish) and eggplants (grilled, braised or pan fried) with soy. Can't forget the Italian eggplant parm.

@Purdee The reason I switched to buying these small round ones is they are so tender. Sometimes those large oval ones have the toughest skin. Trust me, after I ate 2 as a small snack right after they were done cooking, I realized the rest of them will not last long. Turns out they are great for my diet too!

Thanks for the review. I've seen those small round ones in stores here but have not tried them because they are usually more expensive; I do not like the big oval ones so the ones that I usually get and usually on sale at oriental markets are the skinny long purple eggplants.

ha ha ha @SnowFlakey ! Your appetite must have been along the same wave length as ours! The 3 of us also had a whole lobster each at out early dinner ( or late lunch ? ) and then we split the 4th lobster! The guys generously gave me the tail from that 3rd one. So darn delicious.

DS cooked up skewers of Marc Angelo pork Kebabs on the BBQ, we placed them in cute Naan Dippers with along with homemade tzatziki sauce. The guys enjoyed a couple Schneider's all beef dogs too while I went for the blackened red pepper halves. One of those late afternoon lunches that really satisfies. So good in fact that I had a repeat of the same for my dinner too!

romaine salad with sliced strawberries, crispy parsnip curls, and a homemade balsamic dressing. A low carb Lavash mini pita filled with tuna salad. Some steamed green beans and broccoli and a small wedge of mozzarella cheese. A bit heavy on the protein for lunch but I can adjust to have less at dinner.

another batch of roasted red pepper/cauliflower soup ready to be pureed. This is only for me, the guys don't care for their soups turned into baby mush. lol!
For a 1 cup serving it only costs me 61 calories! I use Blue Menu no salt added carton chicken broth for the liquid.

An 8 a.m breakfast means I'm already think 'bout lunch. It will be the last 2 cup serving of soup, ( I'll make another batch on Saturday!! ) salad of 100 grams each of Romaine and Iceberg, with a balsamic dressing. 2 Ryvita crackers topped with Rio Mare tuna/Mayo and 2 baby cucumbers. I may sip a black peppermint tea afterwards.

dempster sesame bagel - toasted then spread with butter and sugar; there 1 dollar tree store around here that gets dempster products and they sell them for $1.50/each - of course they have short expiry date but i put them in the fridge then freezer if need to.
the bagel was supposed to be breakfast but i had marbled cake for breakfast instead

Totally fooled today. Thought I was cooking up a large fillet of salmon. Turns out it was Steelhead Trout? ( according to the label which I read after! ) I pan fried it to get the skin really crisp, then it lifts right off. Set it back in the pan so the other side of it crisped up. What flavour! Had this with 1/2 c. cooked basmati, a small corn on the cob, steamed broccoli and a small cup of my soup. I'm so full still.

BBQ party time for us ( belated Canada Day get together ) The overcast and rain predictions will not stop us.
Scrumptious but simple menu to be served buffet style. Hard to believe for the dessert time I resisted baking ANYTHING with chocolate or caramel, no cakes, muffins, tarts...nada!
What I did instead was buy extra containers of assorted berries, mangoes, pineapple, watermelon, cantaloupe and grapes.
Made up some fun small skewers with the berries and placed other larger fruit wedges onto a platter.
One experimental item will be so refreshing. I placed fresh pears that I peeled, cored and quartered into a glass bowl with some Grand Marnier, water, Cinnamon heart candies and some red food colouring.
I've made these before without the alcohol and the Cinnamon hearts transfer all their gentle spiciness onto the fruit. So good!
I will be placing a tub of whipped cream on the table so if anyone really needs to cover the fruit with extra sugar they can.
