Interesting, and good for those who are celiacs.
It's going to be a pain to figure out the portion they consume, though, if they are in a family.
Also, many more people use GF who are not diagnosed with celiac disease.
Also, it's just really hard in general to get enough of any extra medical expenses to claim the medical deduction.

If I'm not mistaken, you can only deduct what you've spend over 3% of your net income or $2,152 whichever is less. In other words, if your total medical expenditures don't reach those amounts, you don't get a deduction.

This works for us, daughter is Celiac. Since DH's income is minimal at this time, the 3% isn't hard to make for his income. You have to keep track of all medical expenses. We don't use the simplified version. I keep track of what we buy on a spreadsheet. Since there are four in our family and we all eat gluten free pasta, I only claim one of every 4 of those items. All other specialty items like bread and crackers are only for DD so they get claimed. Last year $180 was returned on GF eating for her. Worth the work to me!
