    @ Ashley gotta love those dinners made from the fridge (clean out) and leftovers.

    So pleased your mom is in onboard these days about tackling those tidy up/organizations, fingers crossed she remans on board for a another few goals

    Hiya ladies,

    I was looking at the clock today and it was noon and I still didn't have anything done...but that's okay.

    I ended up getting my buns in gear after watching Days of Our Lives at noon (lol),

    made a double batch of sweet and sour chicken which Logan and I will be having for super AND

    took a whole bun of chicken carcasses/bones and made gravy for the freezer, I made
    4x 1 cup portions
    4x 2 cup portions so pretty pleased

    Had the butter defrosting on the counter and then realized I forgot to take the bananas out of the freezer (oh well) and then noticed that I only had walnuts and not pecans....sigh....could have used walnuts but I love pecans

    So tomorrow I will wake up and drink a pot of coffee (yes I will) and then I will make
    2 batches of banana streusel muffins (Jaden's recipe) for school snacks
    make some banana bread and maybe some banana cookies

    Has anyone ever made banana cookies????

    Had a peek a the flyers that start later this week and here's what I hope to buy

    chicken breasts at FreshCo. I think $2.77lbs
    pork loin $1.97 (Fri, Sat & Sunday) at No Frills
    whole chickens 2 for $6.00 at FB (no FB nearby so we'll see)

    Yes, I have baked banana cookies. I really like banana oatmeal chocolate chip cookies. Here are a few recipes I have used and some feedback on them.


    Skinny Chunky Monkey Cookies

    Makes 30

    3 ripe bananas
    2 cups oats
    ¼ Cup peanutbutter
    ¼ cup cocoa
    1/3 cup unsweetened apple sauce
    1 tsp vanilla

    Preheat oven to 350F. Mash bananas then add the rest of the ingredients and stir and let sit for 20 min. Then drop by teaspoonful onto ungreasted cookie sheet. Bake 10-12min.

    My friend really liked these, but I wasn't really a fan. You don't taste the peanutbutter. The consistency is somewhat like a muffin. I agreed with my brother that they look deceptively like chocolate drop cookies, but don't taste anything like it.



    Banana Chocolate Chip Oatmeal Cookies

    4 tablespoons unsalted butter, at room temperature
    1/2 cup light brown sugar, packed
    1/4 cup granulated sugar
    1 teaspoon vanilla extract
    1 large egg
    1 large banana, mashed
    1 ¼ cups all purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 cups old fashioned oats
    1 cup semisweet chocolate chips


    Directions:
    In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
    In a large mixing bowl, combine butter and sugars, mix until smooth. Add in vanilla extract and egg. Next, add the banana. Beat well.
    Slowly add in flour mixture until just combined. Stir in oats and chocolate chips.
    Drop cookie dough by heaping tablespoonfuls 2 inches apart onto baking sheets that have been lined with parchment paper or Silcone baking mats. Bake at 350 degrees F for 15-18 minutes or until golden. Remove cookies from pans; cool completely on wire racks.

    Makes 2 1/2 dozen cookies



    Banana Chocolate Chip Oatmeal Cookies

    Makes 30-48 cookies

    1 1/2 cups all-purpose flour
    1 cup sugar
    1 teaspoon salt
    1/2 teaspoon baking soda
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    3/4 cup butter, softened
    1 egg
    1 cup banana, ripe & mashed (~2)
    1 3/4 cups quick-cooking oats
    1 cup semi-sweet chocolate chips
    1/2 cup walnuts, chopped



    Directions:
    1 Preheat oven to 375 degrees.
    2 Mix together the flour, sugar, salt, baking soda, cinnamon, and nutmeg.
    3 Beat in softened butter until the mixture is crumbly.
    4 Add egg, banana, and quick oats to bowl and mix well.
    5 Add chocolate chips and walnuts.
    6 Spoon onto greased cookie sheets.
    7 Bake for 13-15 minutes, then place on a rack to cool.

    I was passing through the kitchen and heard a very strange sound - looked out the window onto the back deck OMG it was sprinkling rain! Mind you, couldn't have filled a thimble with what only fell in our whole neighbourhood, but it was wet for about 30 seconds!
    Hopefully, BIG rain will come!

    Nancy...if it was me I would pay off/down the debt, as the interest on the debt would no doubt be more than any amount of interest that I would be receiving in the account/s, and once that debt is gone the money that I was using to pay the debt could then go into the account to build it back up.

    Peanut butter banana bars are in the oven and 2nd cookie sheet of cookies is in the oven. I had a sample of the cookies while warm and yummers, will see what they are like once they are room temperature.

    I hope you do get a little more rain, I'm not bragging but it's supposed rain right through Friday....my grass has gone from brown to a shade of green

    -yep its darn chilly here today in Ontario-hubby had jeans on today -I wore my socks around the house -man our summers are not that hot -what am I saying I just got burnt a bit from my vacation
    -jasper so good your car repair was cheaper-my hubby had just got his sticker for car today and decided to get 2years -cause it is going up by 8.00-goodness what isntgoing up in price -thank goodness we use coupons and price match
