    Going to post this recipe from First for Women magazine-wish I knew of it as a teen as then I would not have spent time frying fries!

    Crispy Oven-Baked Fries
    Active Time: 10 min Total Time: 35min. Serves 4.
    Boiling fries before baking ensures creamy centres and extra-crispy outsides.

    2 lbs russet potatoes, peeled and sliced into 1/2" thick matchsticks

    1. Heat oven to 450F. In pot over high heat, bring 6 cups salted water to boil.
    Add potatoes; cook 4 min. Drain; set on paper towels to dry. Dry pot.

    2. Return fries to pot, cover and shake to rough up edges. Spread on rimmed
    baking sheet. Coat with cooking spray; bake 20 to 25 minutes., turning occasionally.
    Season with salt to taste.

    *I want to try this recipe with sweet potatoes and use olive oil to hold herbs & sea salt
    on the fries. Have been disappointed with fast food fries for years.
    Tip-line that cookie sheet (after you dampen it first) with parchment paper to have
    very little cleanup after baking.

    Made this recipe for dinner and there's no dairy/meat involved in my variation! Found it tasty enough.

    Creamy Parsnip-Potato Mash
    (First for Women, April 17, 2017 issue)
    Active time: 20 min. Total time: 30min. Serves 8 (that would be about 1/3 cup per person)

    1 lb. baby red potatoes, diced (I used Little Potatoes and weighed the needed quantity on a scale; (I halved the little round ones but quartered the longer ones)
    1-1/2 cups sliced parsnips (1 big one and 1/2 of a medium size one)
    1/4 cup chicken broth (I used water from the pot)
    4 oz. cream cheese (I used 1/2 cup of coconut oil)
    2 tbsp. chopped chives (did not use)
    (I added 3/4 tbsp of salt at the end of mashing)

    1) In pot over high heat, boil potatoes and parsnips in salted water, 10min.

    2) Drain potato mixture (I reserved a ladle of the cooking water first); transfer to bowl. Using a hand masher, mash root vegetables with chicken broth, cream cheese and chives. Season with salt and pepper. Garnish as desired.

    (For the record, I ate about 2/3 of this recipe for dinner with two Harvest Bakes. Yum! New favourite.)

    @macw1960:

    Make a generous amount of well seasoned bechamel or white sauce, then into your baking dish, layer:
    thinly sliced potatoes
    thinly sliced onions
    a layer of your sauce
    Repeat.
    Top with shredded cheddar and bake until done under foil, remove foil to brown the top.
    I've made mine this way for years and it always gets great reviews.
