    Thanks Morningrose for the recipe. What I did was put half an onion and couple of cloves of garlic in the food processor and chopped it. Sortayed it for a minute, then put carrots and beans in the food processor and chopped them, added it to the onion garlic mix and while it was getting cooked, used 1 zucchini, 1 red bell pepper and some mushrooms and put it through the food processor and then added it to the skillet. Added some spices, lemon and a spoon of soya sauce and cooked for another couple of minutes and then added the cooked rice and it turned out very good. Atleast now it was eaten. I did zucchini and pepper separately because they are softer than carrots and beans and if I put them all together they will end up in a paste.

    Ohh--thanks for sharing. I will definitely be trying this. It's a wonderful way to incorporate more veggies into our diet--there is never enough!

    Sorry I saw this post now, yes we gently cook them so veggies shouldn't loose crispness, I take equal quantities of veggies es to cooked rice , so 3cups of veggies to 1 cup of uncooked rice, if you like spicy take 2thai chillies too chopped finely along with 3finely garlic cloves.
    It is once in a week in our menu.

    I checked at a co-op that I knew had some. It had been advertised for $5.88 on sale; now it's back up to $7.99 reg price.
