(I'm going to get a bit 'ranty' on this, my apologies up front, but I am quite the passionate about this stuff... I'm forever going after my mother for this as she keeps stuff WAY too long in her fridge...)
[begin rant...]
First, a word about expiry dates: The dates on things such as mustard (say versus milk) may be confused as "expiration dates" versus "best before" dates. -- It's often more of a measure of the brand's commitment to quality (read: freshness) than it's safety perse. Regardless how you read/define the date, there IS a tenancy to roll back the date to reserve the manufacturer from either the lack of quality and/or safety beyond that date. So while you could probably safely consume the product for some time after the date on the container (and that time frame would obviously vary depending on the product) your willingness to consume the product beyond that date is done so at your own discretion. The manufacturer has conservatively estimated that by then, the product has started it's decline (ie: breakdown)... if you think it tastes like crap after that date, well of course it does. They basically told you it would by printing that date on the bottle. If it made you sick, well, it did so for the same reason.
That being said... the dates ARE IMPORTANT. They are an advisory to you the consumer from the manufacturer.
Two things: 1.) mustard most definitely expires... and 2.) It's more than just the food in question:
1.) FIRST.. THE MUSTARD: Most of the ingredients in mustard (virtually all types) are the mustard seed, other natural spices and herbs, water, and vinegar.
All plant products breakdown eventually. The natural ingredients will ultimately breakdown given time. I have heard it speculated to be about 2 years for basic yellow mustard in a controlled environment - such as in a completely sterile container that itself doesnt break down such as a glass jar. Which leads me to the second point...
2.) SECOND... THE CONTAINER: However Since most mustards (and other condiments) now come in plastic containers, the plastic itself will start to decompose into the product... given the fact that you have vinegar in the mix as well as some form of natural existing oils in the mustard seed, plus other oils, etc coming from the other spices and herbs as they naturally break down... the combination of which will also start to break down the elements in the plastic as well.
While it might not be essentially "poisonous" per se (as the container would have to meet a reasonable standard to qualify as food-safe) -- it obviously isn't considered food itself, and you probably wouldnt want to ingest what is eventually coming out of them 2 years later. The expiry date is also a measure of when that container breakdown is most likely imminent... even if the food contained is past it's peak but not necessarily unsafe.
So, the DATES (either Expiry or best before) are essential to consider for both quality and safety. Eating it beyond the date might not kill you, but I wouldnt want to take a risk of putting it in my body just the same.
For the cost of a bottle of mustard, I wouldnt risk it.

(incidentally, I'm not the radical type who's dumping milk down the drain on the day that's printed on the carton. It very often doesnt hang around my fridge that long anyway, but on the off chance it does I'll usually finish it within a couple days past anyway. But if a week goes by... it's getting dumped.)
