I have used the new PC Sweet Ghost Pepper Bacon a couple of times now;
Tonight I made loaded Broccoli with it. I used Gouda instead of Cheddar and it was great, just a hint of the heat.
Also had grilled pork tender loin and Basmati rice.
Here is the prep done;
and on the plate;

I soak the plank for at least an hour. Grill the fish for 30 minutes at medium high.
I drizzled the fish with a little white wine, if you don't mind sharing.
You just have to watch the edges of the plank don't catch fire, and douse them with water if they do.
Very Easy!
Costco sells the fish and the planks.

I am totally hooked on my pan blackened corn, not sure why I have never done it before.
We have always grilled corn on the cob, and used to do packets of frozen niblets in tin foil on the BBQ.
The corn on the cob takes a long time on the BBQ and the packets are hit and miss to get it to burn just right.
Now I do it in a dry cast iron frying pan on hot!
Throw the frozen niblets straight in and stir it every once in a while to get the right amount of burn.
So easy, only takes about 10 minutes in a hot pan.

my hubby always does corn in the cast iron, i like it with some chopped green onion, and a pinch of salt and chili, remind me of street food corn

Sounds great Purdee, once its burnt up a bit and so sweet you can do almost anything or nothing and it is fantastic.
