I'm sorry this is so late, but I promised you my '70s Paprikash recipe, so here it is...I have others in my 70s repertoire, but I think most of them were quick, easy, family, kid-friendly ones...:) We used to serve this at our SuperBowl parties and everyone absolutely loved it!
Paprikash a la The Seventies
20 oz tomato juice
1 small can tomato paste (mix these two together with equal amounts of water)
2C frozen mixed vegetables (corn/carrot/peas)
2 C sliced mushrooms
Dice:
3 celery stalks
2 green peppers
2 small clute peppers
3-4 medium potatoes
1/2 lb green beans
2 medium onions
4-5 cloves of garlic
Spices (I have no amounts for these, just use your own good judgement :) )
freshly ground black pepper\onion powder
garlic powder
paprika
To taste: cayenne, crushed red pepper, salt season salt (I usually left the crushed red pepper on the side so that our party guests could help themselves)
1 3/4lb diced, floured stewing beef, seared in butter
Directions:
Prepare ingredients as directed, toss it all in a big pot, slow cooker or pressure cooker if you're in a hurry until everything is melded together, heated through, and the meat is almost at the 'shredded' stage.
Serve over rice, with homemade biscuits and lots of butter!
