In an effort to reduce food waste I'm going to try and creatively use up all my leftovers and random produce that builds up in my fridge. Please feel free to add your creations and hopefully we can all get inspired :)
Depending upon what's left - usually things end up in a casserole, stew, or stirfry.
Today I found in the fridge:
2 chicken thighs
about 1/2 - 3/4 cup of cooked rice
about 1/3 cup of corn
2 really ripe avocados
I did an allrecipes search and came up with this recipe:

I tweaked it a bit to make only 1 serving (my kiddos only like plain food so plain chicken, rice and corn for them lol). I also do not have any cilantro so I picked a green onion out of the garden.
I mixed all the ingredients (except the avocado) and warmed it in the microwave. Topped it wish one small mashed avocado - delish :) Will definately make again.
Most of our leftovers end up in sandwhiches for dh & I for lunches..
I normally don't overcook unless it's with intentions for lunch meals etc for dh & I and it's normally things like chili & macaroni casseroles which we don't mind eating for lunches for the week.

I really liked the mexican rice dish so I made a big batch of it (minus the chicken) and DH and I had it as a side dish Tuesday and Wednesday.
Today I have to use up the rest of the black beans, 1/2 red pepper and a pkg of mushrooms so I am going to make a big batch of spaghetti sauce and add 1lb ground beef and 1lb ground pork.
Good thing I can go grocery shopping again either tomorrow or Saturday as I am pretty much all out of produce except for 1/2 cucumber, a 1/2 bag of carrots and a few apples and 2 bananas.
When one has starving roommates, there are no leftovers. :P
I try to make meals in large batches & freeze in portion containers. With a few exceptions, I make sure to save a spoonful or two to share. ;)
Chicken stir-fry was our regular " clean out the fridge of odds and ends veggies" en good the next day for leftover lunch too! Now I want some :)
