I was a busy little beaver this morning. Made Peach Jam and 5 lbs of Pickled Beets. Attachment 291115
Both recipes are very very easy. Here they are.
PEACH JAM
5 cups crushed peeled peaches (about 14 medium)
2 tbsps lemon juice
7 cups sugar (i used only 4 cups and it was sweet enough)
1/2 bottle of certo pectin ( i used 1 pouch because couldnt find the bottle)
combine peaches, lemon juice and sugar. Bring to Rolling boil and continue boiling for 1 minute, stirring constantly. Remove from heat and immediately stir in the pectin. Stir and skim for 5 minutes.
Pour into hot sterilized jars. Seal, cool and label. Store in cool, dry dark place. Makes approximately 6 small jars.
PICKLED BEETS
Beets
1 1/2 cups vinegar
1/2 cup water
1 cup Brown sugar
3 cloves in each jar (optional)
Boil your beets until done, approximately 1 hour (test with fork). Peel beets and cut into desired pièces. Place cut up beets in hot sterilized jars.
Add vinegar, water, Brown sugar and bring to a Rolling boil.
Pour mixture into jars on beets. Add 3 cloves into each jar. Store in cool, dry dark place. Enjoy
