USDA Complete Guide to Home Canning (2009). This is considered the ultimate authority to home canning, and it's free.
National Center for Home Food Preservation online course (Free as of 2015). A free online self-study course on preserving food at home. Training modules include: “Introduction to Food Preservation”, “General Canning”, “Canning Acid Foods” and “Canning Low-Acid Foods”.
