I've bought my seeds the last couple of years from Heritage Harvest Seeds. they are CDN based and specialize in heirloom seeds, which are non-GMO.
if you don't want to order online, check out a couple of your local nurseries and ask them about their seeds.
I don't do a lot of sprouting, but I've bought organic seeds at my local natural food store. It might worth asking them if they can do a bulk purchase.
And yes, I rinse the sprouts every day. Changing the water every day prevents mold from forming in the jar and destroying your crop.

I do, I use the jar method and rinse them every single day. The jar I use is a regular jar covered in mesh held together by elastic. Pretty simple. But yes, I find it gets stinky and I would not eat the stuff if not rinsed every day.
Ikea came up with a new sprouter product, I am eyeing it but not sure if this method is as reliable as the simple jar one. Sprouter looks kinda funky though.
