question about American Express Cashback

does anyone know if and how I can apply the cashback earned on the Simplycash amex card to pay off or reduce my amex bill?

I do not know about Amex specifically but most cards pay out cash back once a year. On my cash back cards when I log in it shows me the cashback I have earned and tells me underneath the date it will paid out to me.

Please tell me u pay off your monthly balance in full each month

Yes, I pay amex bill in full. I don't charge a lot on the amex so I usually pay the bill very early.
