My mother always did the equator cut and I always found that the bottom crust was not nearly as good as the top crust so it was like having a good sandwich when you ate the top half and then the not as good sandwich when you got to the bottom half. Not sure why but the mirror cut seems to take that away
A bit off of topic but if we are having soft boiled eggs in egg cups it is a lot easier to dip the toast into the egg yolk if you cut the toast into long thin strips about the size of the opening
