    Thats perfect timing! Cheese is so expensive these days.

    We grate the cheese before we freeze. We find the texture changes once you freeze a whole brick but frozen shredded is perfect and SO easy when your making homemade pizzas or cheesy casseroles !!

    I usually freeze the whole block and then once it is defrosted it can be crumbled. It is very much like shredded without the extra effort when it is used to be melted.

    Thank you for this! Because I froze a bunch of them without grating and was wondering what on earth I was going to do with them after they come out.

    I remember reading to defrost them in the fridge and it shouldn't affect the texture like normal defrosting.

    I find it depends on the brand. For example, If I freeze No Name brand and defrost in the fridge, it still comes out a little crumbly. But with name brands (Kraft, Cracker Barrell) it does work well defrosting in the fridge
