    From the August 13 issue of First for Women:
    Drinks!
    Arnold Palmer Oasis-1 serving
    1/2 cup iced tea
    1/2 cup coconut water* (my note: this water is very sweet, so taste the drink before adding any sugars!)
    1 lemon, juiced

    In a glass filled with ice, combine iced tea, coconut water & 2 tbsp lemon juice. Sweeten to taste with honey. Garnish with lemon slices, blueberries & fresh mint if desired.

    Coconut & Lime Bahama Breeze-1 serving
    1 lime, juiced
    1 tsp sugar* (coconut water is very sweet, so taste the drink without adding sugar before doing so)
    1 cup coconut water
    1/4 cup raspberries

    In sugar-rimmed glass, mix lime juice, sugar & coconut water; chill 15 minutes. Add raspberries, ice & lime wedges if desired.

    Sleep remedy for a hot night Drink a glass of lemongrass iced tea before bed-it helps the body to cool down. You should feel sleepy within 30 minutes. Steep 4 lemongrass tea bags for 5 minutes, then chill the tea in the fridge OR
    add a few drops of food-grade lemongrass oil to place iced tea or water. Enjoy ONE cup nightly as part of bedtime routine.

    Dehydration & headache reliever
    Cucumbers-enjoy 1 cup daily to reduce risk of heat-triggered headaches, muscle spasms and other aches in half.

    Frozen treats
    Coconut Kissed Melon Popsicles-Serves 10. Active time: 20 minutes, Total Time: 6 hr.

    3-1/2 cups diced watermelon
    5-1/2 tbsp sugar, divided
    1 lemon, juiced
    1/2 cup canned coconut milk, well-shaken
    6 kiwis, peeled
    1 tbsp mini chocolate chips

    1) In a blender, puree the first 3 ingredients. Divide among 10 Popsicle molds. Sprinkle in chips; insert sticks. Freeze 3hr, gently stirring every 30 minutes.
    2) In bowl, whisk coconut milk with 1-1/2 tbsp sugar; pour 1 tbsp. on top of each ice pop. Freeze 45 minutes.
    3) In blender, puree kiwis with remaining sugar. Pour through mesh strainer; pour into molds and freeze 2 hrs.

    Rainbow Layered Fruit Popsicles-Makes 6. Active time: 30 min; Total Time: 6hrs.
    (Photo shows red/orange/green layers and the sticks are like the short curvy ones used in Haagen-Daaz ice cream bars).
    1 cup raspberries
    1/2 cup coconut water
    1 lemon, juiced
    2 tbsp. agave, juiced
    2 peaches, peeled and sliced
    1/2 cup orange juice
    1 lime, juiced
    4 kiwis, peeled and sliced
    1/2 cup pineapple juice

    1) In blender, puree raspberries, coconut water, 1 tbsp lemon juice and 1 tbsp agave until smooth. Divide mixture among six 1-cup Popsicle molds or paper cups, filling each mold about one-third of the way. Freeze at least 1 hr.
    2) In blender, puree peaches, orange juice, 1 tbsp lime juice and remaining agave until smooth. Pour into Popsicle molds on to of raspberry layer, leaving about 1 " at the top for the next layer. Freeze at least 1 hour.
    3) In blender, puree kiwis and pineapple juice until smooth. Pour into Popsicle molds on top of peach layer. Place a Popsicle stick into each mold; freeze at least 4 hrs. Release Popsicles from molds just before serving.

    Desserts (one today and one on Wed)

    Frozen Cookies and Cream Cheesecake Minis-Serves 8. Active time: 30min.; Total Time: 4-1/2hrs

    1 (14oz) box chocolate sandwich cookies
    1/2 cup dark chocolate chips, melted
    1/2 stick butter, melted
    2 (8oz) pkgs cream cheese
    1 cup plain Greek yogurt
    1/2 cup melted white chocolate
    1 tbsp vanilla extract
    1/2 cup sugar
    1/2 cup whipped cream
    8 mini chocolate sandwich cookies

    1) In processor, pulse large sandwich cookies into crumbs. Remove 1 cup (of crumbs); set aside. Add melted chocolate & butter to processor and blend with remaining crumbs. Press into eight 3" ring molds.
    2) In clean processor, blend cream cheese, yogurt, white chocolate, vanilla and sugar until smooth. Transfer to bowl; fold in reserved cookie crumbs. Spoon cheesecake mixture into ring molds. Cover and freeze at least 4 hrs.
    Garnish each with whipped cream dollop and mini cookie to serve.

    I gave the no-bake applesauce brownies recipe a try yesterday and did not get bars but something vaguely sloppy like pudding. I had added 2tbsp of Fry's Cocoa to get a chocolate taste but the batter remained like thick glue more like pudding. It was edible.
    BTW, the batter might fill a thin layer in a rectangular toaster oven pan, not a square baking pan like I thought (you'd probably need to double the ingredients).

    I MacGyvered the ingredients: used spelt flour (definite floury granular aftertaste in the dessert), brown sugar and homemade unsweetened applesauce).

    Tell me how the recipe turned out in your trial!

    *Sky-High Neapolitan Cheesecake or Minis-Serves 12*

    Active time: 30min.; Total Time: 4-1/2 hrs

    2 (11 oz) store-bought chocolate loaf cakes
    2 (8 oz.) pkgs cream cheese, at room temperature
    2 cups plain Greek yogurt, at room temperature
    2 Tbsp. vanilla extract, divided
    2 cups sugar, divided
    2 (.25oz.) envelopes gelatin
    1/2 cup milk
    1 lb. strawberries, hulled, sliced and divided
    1 cup heavy cream

    1) In processor, pulse chocolate loaf cakes until crumbly. Press into parchment-lined 9" springform pan.

    2) In clean processor, puree cream cheese, yogurt, 1 tbsp vanilla extract and 1-1/4 cup sugar 2 minutes. In small bowl, whisk gelatin into milk. Add to food processor; blend 30 seconds. Pour mixture over chocolate crust. Refrigerated at least 4 hrs. or overnight.

    3) Meanwhile, in blender, combine half the strawberries, 1/2 cup sugar and 1/2 cup water. Chill 15 min.; puree mixture until smooth. Strain through fine mesh strainer. With mixer on medium-high speed, beat heavy cream and remaining vanilla and sugar to soft peaks. Add 1/2 cup strawberry sauce; mix until incorporated.

    4) When ready to serve, unmold cheesecake, place on platter. Spread berry whipped cream on top. Garnish with berries and strawberry syrup.

    Variation-Neopolitan minis

    When we're heading to a picnic or barbecue, we love to make these layered bites in cut muffin size for easier sharing.

    The simple how-to: Divide the cake crumbs and filling among 24 lined muffin wells or twelve 3" cake molds, then chill as directed. Pack the whipped cream, strawberry sauce and berries in separate containers and assemble the minis once you reach your destination.
    Hint: for easy transport, we like to freeze the cheesecakes in their muffin tins or cake molds for 1 hr. before leaving; the metal containers help retain the cold to ensure a perfectly refreshing treat.

    Jamie Oliver's recipe for ice cream cake with 80% less sugar (First for Women, Sept 3 issue):
    He uses yogurt and fresh fruit instead of ice cream.

    Photo shows finished cake on plate as having the banana layer on bottom, jam layer, then the strawberry layer. If you follow the recipe, the strawberry layer should be on the bottom (or top in the pan but not on the plate). Oh well.

    1) In processor, puree 1/2 cup yogurt (assume plain?) and 2 bananas; pour into a loaf pan (assume metal) and freeze 15 minutes.
    2) Spread on 2 tbsp of raspberry jam (over the banana layer-I'd say there are more like 4-5 tbsp of jam spread to get the 1/4 inch layer in the photo-YMMV).
    3) In processor, puree 1/2 cup of yogurt and 1 pound (454g) of hulled strawberries. Freeze (this mixture only) 1 hour or until set. place on top of jam (layer in pan) and top with fresh berries.


    Peaches and Cream No-Bake Cheesecake (from The Chew: Quick and Easy Stressfree recipes for every occasion)
    Serves 12
    Prep. time: 5 min. Inactive time: 4 h

    2 cups graham cracker crumbs
    6 tbsp. unsalted butter, melted
    8 oz. cream cheese, room temperature
    1 14.5 oz can sweetened condensed milk
    1 16 oz bag frozen peaches (dry measure 1 cup = 8 oz, so 2 cups of peaches are 16oz.)

    1)Spray a loaf pan (assume metal) with nonstick (cooking) spray. Line the pan with parchment paper so it hangs over the edges, creating handles. Spray the parchment with more nonstick spray.

    2) In a medium bowl, combine the graham crackers crumbs and butter. Press into the bottom of the prepared loaf pan.

    3) In a large bowl, whisk together the cream cheese and sweetened condensed milk. Fold in the frozen peaches. Pour the peach mixture over the graham cracker crust. Spread the top out into an even layer. Place in the free for 4 hours or overnight.

    4) Remove from freezer 15 minutes before serving. To serve, cut cheesecake into slices.

    *This recipe might work with chocolate chunks or berries--my sweet tooth says so.*

    In a shaker with ice, mix:
    6 oz of passion fruit tea,
    2 tbsp of tequila,

    Good Housekeeping July 2019 comes to our hot weather food rescue!

    Stuffed Tortilla Cups-6 combinations suggested (some require precooked food, so raid the leftovers or prepared condiments)
    Finely cop or thinly slice the ingredients, layer into tortilla cups (i.e. Tostitos Scoops) and drizzle with olive oil and a squeeze of lemon or lime juice.

    #1 Cooked chorizo & roasted red pepper & parsley

    #2 cooked, peeled & deveined shrimp + avocade + jalapeno (pepper)

    #3 cooked bacon + tomato + arugula + blue cheese

    #4 black beans + pineapple + red onion

    #5 watermelon + feta cheese + chives

    #6 green olive + lemon zest + scallion (I'd recommend those Castelvetrano olives or the stuffed green queen ones from Costco for the taste)

    No Bake Chocolate Dessert plus three other skewer combinations!

    Active time: 10 min. Total time: 10 min plus freezing (4h)

    16 small strawberries or 8 large strawberries (halved)
    6 Fun size Snickers bars, halved
    Dulce de leche (or other caramel sauce)

    On each of 4 wooden skewers, alternately thread strawberry & Snickers bar pieces; place on parchment-lined baking sheet and freeze until firm, at least 4 hours.

    Other skewer combinations:
    #1 Chocolate donut holes + caramel squares + sea salt

    #2 Banana + marshmallow + peanut butter

    #3 Pound cake + pineapple + toasted coconut

    Going outside of the frozen treats/cold treats bit to post a salad!

    Jamie Oliver has a mango salad (@walkonby you might want to take a peek) that was posted just over a week ago.
    It's to accompany surf & turf platter but this salad might be a good standalone item on its own when you don't want to turn on an appliance.
