@cath007 I have copied the first Apple Oatmeal Muffin recipe you posted because the coffee buns I made are gone.
Homemade Pizza for our meal, muffins for later with tea...thanks for posting.
I'll be using some of the apples from our tree that I had sliced and froze.

Good thing I baked these before our hydro cut out for 7.5 hours! @cath007 DH really enjoyed the taste of the maple syrup that was brushed over the muffin tops.

oh I know this thread is for apples, pumpkins and the like BUT I'm just too excited not to share a picture of 2 new squashes ( I mean new to me ) that I'll be cooking up and adding to the Thanksgiving platter of roasted and cooked veg that I have already got planned. It's almost Sunday!! o.k., not really , but it's coming!

Here they are next to a K-Cup to show how small they are. A bit over a buck each. Turk's Turban and Delicata. The Turk's Turban I'll be stuffing with a sausage/mushroom/Parmesan mixture, sort of layered with the mashed contents of the squash itself and the Delicata just gets sliced and roasted.
