    Snickerdoodles
    --------------

    1 c margarine
    1 1/2 c sugar
    2 eggs
    2 1/2 c flour
    2 t cream of tartar
    1 t baking soda
    1/4 t salt

    Cream margarine and sugar, beat in eggs.
    Mix in rest of ingredients.
    Shape into small balls, roll in mixture of 1T sugar and 1T cinnamon.

    Bake on ungreased cookie sheeet at 400 degrees about 7 to 8 minutes.

    Soft gingerbread cookies - to roll and cut shapes
    ------------------------

    Cream together:
    1/2 c margarine
    1/2 c molasses
    1/2 c sugar

    Beat in 1 egg.

    Add:
    2 1/2 c flour
    1/2 t baking soda
    1 1/2 t ginger
    1/2 t nutmeg
    1/2 t salt
    1 t baking powder
    1 1/2 t cinnamon
    1/4 t cloves

    Mix well, roll and cut into shapes.
    Bake on ungreased cookie sheet at 350 degrees, about 7 minutes.

    These cookies are very different - but well worth trying because they are SO delicious!

    These need to be chilled overnight before baking. It's good to make the candied peel the day before as well.

    Lemon Cornmeal Wafers
    -----------------------

    1 1/2 c flour
    1 1/4 c sugar
    1 c yellow cornmeal
    1 c softened butter
    2 large egg yolks
    1 t grated lemon peel

    Combine flour and cornmeal. In another bowl, beat butter and sugar til fluffy. Add egg yolks and lemon peel, beat in dry ingredients and mix well.
    Divide into half, and shape into 10" logs. Wrap in wax paper and chill overnight.
    Preheat oven at 350 degrees. Slice logs into 1/4 inch slices. Bake on ungreased cookie sheet 10 to 12 minutes until firm.

    Glaze
    -----
    Stir 3 t lemon juice into 1 c icing sugar. Add more juice if needed.

    Candied Lemon Peel
    -------------------
    Remove peel from lemon and cut thinly into about 1 1/2 inch strips.
    In pan, combine 1/4 c sugar and 1/4 c water. Bring to boil til sugar is dissolved, add peel and cook five minutes.
    Remove peel onto paper towel, cool. Then toss peel with 1/4 cup sugar.

    After glazing cookies, put a few pieces of candied peel on each.

    Note: I also tried using mandarin orange peel, it worked well.

    They look very much like the below pic, just with candied peel added on top.

    But don't expect them to last long - they are amazing!
    i had to cut the baking time down to 10 minutes on these as they browned really fast (using electric stove). Might add a bit more oatmeal so they don't spread quite so much, but they definitely are yummy! thanks for posting!

    I made these 2 days ago and they were yummy. my kids loved them. of course cause every oven are different i just had to tweek the temp a bit. no cooking time was there but easy enough to figure out . will be making them again tonight but will try with a lil less cinnamon.
