    i have a fridge full of veggies to use up so kids/dh are having hamburger helper with turkey, mushrooms, peppers, onions, peas added in and a side of broccoli. i'm gaving a stirfry of zuchinni and mushrooms with rice. dd1 and i made chocolate muffins today so maybe that for dessert

    A repeat of last nights poutine and chicken nuggets since I'm crazy and accepted a TV gig on what was probably the only night I have free for a very long time...Oh well..I just hope it doesn't go all night since I work tomorrow!

    Oh and we will more than likely be fed very well on set tonight so I tried to not eat too much LOL!

    I'm not sure what I was thinking but today I grilled 13 ears of sweet yummy local corn to use some of it in the tacos ( I add beans and roasted corn to stretch it further and add flavor). I also made HUGE crab stuff mushrooms, crab cakes, fresh mushrooms and dip for DH and tomorrow I will take the cobs and make a corn stock that will later be turned into corn chowder
    I reeeeeeally can't wait til I can eat normal food again

    Ill try and remember to post pics later.

    We had ribeye steak, garden potatoes, green beans, zucchini and garlic bread. I also grilled some chicken breasts for the youngest son because he doesn't like steak.

    We had perogies with sauteed onions and mushrooms, lots of dill.

    Just had dessert - M&M's cream puffs - absolutely super! Had a bit of Smucker's chocolate sundae sauce with them.

    Is this an appetizer, dessert, or outrageous “dinner”?

    Prep time: 5 minutes
    Cook time: 10 minutes
    Serves: 6-8

    INGREDIENTS
    1/2 cup sliced strawberries
    1 TB + 2 TB sugar
    1 Box Graham Crackers
    1/3 cup and 2/3 cup heavy cream, separated
    20 + 20 marshmallows, separated
    1/2 tsp. vanilla
    1 cup semi-sweet chocolate chips
    ½ cup cream cheese
    12 mint leaves (1/3 cup)
    1/4 tsp. peppermint extract

    DIRECTIONS
    In a bowl, toss the strawberries with 1 TB sugar, and set aside. To make the mint “guacamole”, process the cream cheese, 2 TB sugar, mint leaves, and peppermint extract to create a creamy green consistency.
    Arrange alternating layers of graham crackers and 20 of the whole marshmallows on a large platter (or 2-3 plates).
    Heat 1/3 cup of the heavy cream in the top of a double boiler with 1 inch of boiling water on the bottom. Add the marshmallows and stir for 4-5 minutes while the marshmallows melt into a thick sauce. Stir in the vanilla, cover, and turn off the heat.
    In a small saucepan, heat the remaining 2/3 cup heavy cream over medium heat until almost simmering (2-3 minutes). Turn off heat, add the chocolate chips, let them sit for a minute, and stir to create a creamy sauce. Heat a little more if necessary to melt the chocolate.
    Using a large spoon or small ladle, drizzle the chips with the chocolate sauce, and then with the marshmallow sauce. Spoon the fruit salsa over the top, and finish with a dollop of guacamole.
    Serve, and step away to avoid the stampede.

    I know I know but I like buying from pizza pizza..I usually buy the panzerotti deal, 2 panzerotti with 1 filling each with 2 pops for $9.99..these things are huge.
