I will use some turkey to make Vietnamese salad rolls. We will want something light after the big meal!! I will also make Italian wedding soup with the soup stock I make from the carcass.

We are not doing a turkey supper this year. We were invited to family Thanksgiving, but it is 5hrs away and that would make for a very long trip with a newborn. We are hoping to go up at Christmas time.
I have leftover turkey in the freezer, so I'd love to see others suggestions.

No turkey dinner this year, there are only two of us, so no point in cooking a whole turkey. Our freezer is full, otherwise I would make a turkey and then make some soup and freeze it.

Ha, you beat me to starting this thread, so yay!
We do only one turkey a year, so as long as I've made enough gravy, there is no problem with leftovers, just with having cold and hot sandwiches. I could eat them daily!
Other things with turkey I do are a stirfry, make chow mein, a stew, or make 'a la king' (creamy mushroom sauce).
I use baked ham leftovers for pizza a lot, tastes so much better than deli-type ham! Also, any type of eggy dish - I like to make quiche.

My favourite is turkey pot pie with bisquick crust on top! Sooooo good since I hate the normal crust the store bought ones come with.

I loooooove cooking turkey and ham strictly for the leftovers!
With our leftover turkey we make:
Turkey sandwiches
Hot turkey sandwiches
Turkey a la king
Turkey pot pie
Turkey soup
Turkey nachos (pretty much the same as chicken nachos, load em up with cheese and peppers & pop them in the oven - we love them!)
With leftover ham we make:
Breakfast (reheat it in a frying pan - great with toast and eggs!)
Ham sandwiches
Pea soup
Scalloped potatoes (we chop it up and put it right in the sauce - also goes well alongside the potatoes)
& The dog thinks she won the lotto when we give her the big salty ham bone!
Happy Thanksgiving!

Very little left this year. Gave DS a huge " care " package when he left with mostly the meats from dinner ( ham, turkey, Cornish hen) plus they wiped out the huge bowl of mashed taters already. I always made soup in the past, and that pie thing with a Bisquick topping too like roseofblack does.
DH is the Gravy King and he made so much that there is a fair amount left in the bowl that I could easily have as a beverage!!
( damn him! lol) If it remains there past Wednesday I will make a stew with it for sure.

For the first time ever, I am making Turkey stew... it's smelling delicious! Saturday dinner was ham with friends, Sunday dinner was Turkey with friends, and tonight we are going to another friends house for steak!

I love making turkey pot pie!
Sometimes I break the turkey into small pieces and simmer them with onions and bbq sauce and then make sandwiches with the mixture.Check out my website:
