I just recently started to work at South St. Burgers. This is a fast food joint, and its owned by New York Fries. The burgers here are so delicious. Check out there website www.southstburger.com The store sells New York Fries, and i actually learned a couple of thier secrets on how to make a good fries, BTW there are only two of these stores in the WORLD. They are starting to expand the company ( its owned by NY Fries). One secret is that, the reason why New York Fries taste so good, is because the potatoes they use have SUGAR in them. When the potatoes are harvested, and when they are being processed, they are soaked in Sugar. So basically there is some sugar in New York Fries. Also another thing is that, NY fries, cooks its Fries in three different stages. First what they do is that, they cut the fries, and then they scoop a basket full, and place it in a low temperature oil, until the skin starts to wrinkle. Then after that they put it in another oil which is slightly higher and they take the fries out when the fries start to turn a little yellow. And then we hang it. So when people come to buy the fries, we put it in a third oil, which is higher temperature than the other two oils. And finally when the fries turn GOLDEN YELLOW its READY TO SERVE. Three times fried - I never would have guessed. Good eats though - except for that cheese sauce - that stuff can't be healthy.
No South St. Burgers in Sault Ste Marie (yet), but it sounds good. I was wondering when New York fries would expand in that direction. Seemed inevitable.

Im pretty sure it will take a long time for it to expand to other citiies rather than toronto.

wow... i must say that must be even worse than McD's fries/burgers as far as healthy food is concerned... lol

The relationship between south St. Burgers sna NY fries is that they are owned by the same guy. In south st burgers they have NY fries, they have everything that NY fries has also they sell Burgers, Onion Rings, Smoothies, chick burgers. etc. So they started a new chain[/u]

THREE times fried is quite alot, and the sugar... hmmm... im starting to think how unhealthy they are!

They use russet burbank that come in cartons.
A potato is made up of sugars and starch. A high sugar potato will BURN in 340 degree fryer fat before it cooks due to the high sugar content.
We make sure that they get LOW sugar potatoes, so they cook correctly !
You can choose to believe me or not, but that is the deal...sorry thilipan.

I work at the store, i know ok, the boss who is JAY told us about the company, and said that during the manufacturing process, sugar is added. If you would like to quote me wronge, then i will have go back and ask my boss, to give you a personal email about the company

i am very sorry for the misconception. You are kind of rite. they are Russet Potatoes. I just got it kind of miss heard from Thomas who is the director of operations. Enzymes turn potatoe starch into sugar syrup. And BTW what is your company called. i have noticed that we get differnet potatoes then we usualy get. I think we changed the producers. And what is your name and where is your farm. I would love to ask my boss about your farm. And also how are the potatoes taken care of in the farm and what happens in the manufacturing process.
