Thread: Calling all Vegetarians - Help needed

My friend has just undergone surgery for breast cancer and she is facing radiation and chemo. She is trying to eliminate meat from her diet and is looking for yummy recipes featuring plant-based proteins. If you have any favourites, I'd appreciate if you could post them or pm me. Healing thoughts and prayers would be gladly accepted as well. Thanks in advance!

If your friend like spicy foods, Indian and other Asian dishes are generally vegetran/vegan based. I have several fave vegan curries I can loo out for you.

Prayers for strength, courage and most of all, KICKING CANCER'S BUTT completely!!!
I'm not vegetarian but I have tried to cut out some meat from my diet. Basically when I started doing this, I discovered that lentils, beans, and quinoa became me new best friends. Here's a few of my favourite recipes that I've used for meatless meals:

Mexican Bean Salad: a nice one for summer but it makes A LOT! and if you don't like spice, eliminate things like cumin and limit pepper etc. : http://allrecipes.com/recipe/mexican-bean-salad/
Vegetarian meatloaf: http://www.food.com/recipe/really-go...f-really-33921. I've made this a couple times but usually add more tomato sauce than called for to make it a bit more moist.

I hope your friend has a full recovery! There are many health benefits of cutting out meat I went vegetarian in January of this year and I feel fantastic. I applaud here for taking steps toward health!

My daughter has recently become vegetarian and it's quite a challenge to find recipes that everyone will enjoy....
