I was lazy last night and did nothing. I didn't plan dinner for tonight either. But thought about it this morning and decided nachos with cucumbers/carrots on the side it is!

I had cooked ground beef in the freezer. Took it out at lunch
I bought 2 bags of nacho chips for $1 each at GT the other day. (they expire early October)
I have cheese, peppers, onions and sour cream on hand.
    We have a plan!

It worked out well considering I did it in my big boss fryer. Took about 3 hours from frozen. At 1/2 way point I removed the giblets.

Dinner out tonight at Stache on Main in Wellington.
I had a Caribbean roti and a couple of pints of stout.

Art gallery by day, piano lounge by night.

On Thursday I was supposed to do up a batch of both dogs and burgers for the guys.
I left starting this till late and then discovered that there were NO frozen patties left, NO ground burger at all either to make patties up.
I did find LOTS of pkgs of beef hot dogs but the only buns in the freezer were all hamburger buns....lol

So I made up a big roast pan of sausage/potato casserole instead. They were fine with that.

Last night I made Meatballs in Mushroom Gravy over Mashed Potatoes with Roasted Broccoli and Cauliflower. Meatballs were homemade frozen in the freezer and I tried making it using Mushroom Broth instead of Beef Broth, I like it.

Sounds good, I like meatballs. On Tuesday I'll make meatball pizza or calzone.

..its cold here today!! and we have a frost warning for tonight...I cut down all the kale in my garden today, gave some away to family/friends & blanched the rest and put in the frezer..it took ALL day!! lol..so I'm having kale cooked with lots of bacon, onion & garlic, fresh rolls and a small container of beef stew that I made last week and stuck in the freezer

Have fun! Sometimes our date nights get a little crazy and I am hating life the next day. Having unlimited wine in the cellar does not help to make smart choices when you are a few bottles in!
