    I was staring at the sausage/hot dog cart outside Canadian Tire because the menu offered pulled pork. That is the one dish I want to try in a slow cooker. One day soon...with Dr. Pepper if possible in the batch.

    Bumping this for ideas! I try to do a crock-pot meal 1 night during the week (Usually a Wed or Thursday)

    Last week I did a beef roast and served with gravy, mashed potatoes and veggies.

    Next week I am thinking pulled pork. I already printed off a recipe for the rub.

    Some other ideas I have: Chicken fahitas (I will cook the chicken, peppers/onions etc in the crockpot) then we can serve on the wraps.
    Trying to get ideas that both my kids will like.

    ooh just read a recipe for a full meal in the crock pot and I have everything on hand!

    Slice potatoes. Layer in bottom of crock pot. Sprinkle cheese (parm) and garlic, do another layer of each etc.

    Add chicken on top. Add carrots. Cook on high for 4 hours (I would do 8 at low but that is what I do with everything lol)

    Add green beans. Cook on high for 30 mins.

    Serve! Trying this for sure next week!

    Yesterday morning I put 6Lb rack of ribs in the slowcooker. Then once home I brushed with BBQ sauce and put in the oven for a bit. They were good for a week night meal. And the best part is that huge package is out of my freezer. 1 more to go- next month

    Saw an ad in the December 2018 Food Network magazine for Kohl's selling Food Network pressure cooker accessories-did not know about these items!

    Tomorrow will be a crockpot meal day. Will take a roast/meat out of freezer tonight and prep it so it is ready to dump in the crockpot in the morning.

    Happened to find a few slow cooker recipes from the Jan. 28, 2019 issue of First for Women:


    Slower cooker cheesy dips
    1) Cheesy crab-in a slow cooker, combine 12 oz crab meat, 8 oz cream cheese, 1/4 cup mayonnaise, 1 chopped onion and 1 tsp. Old Bay seasoning (I've seen it sold at Fortinos). Cook on low 2 hours. Serve with crackers or pita.

    2) Spinach artichoke-In slow cooker, mix 14 oz. can chopped, drained artichoke hearts, 10 oz. baby spinach, 8 oz. cream cheese, 1 cup shredded Italian-blend cheese and 2 tsp. minced garlic. Cook on low for 3-4 hours. Serve with crudites or tortilla chips.

    3) Mexican corn-in slow cooker, mix 2 (15 oz.) cans corns, 2 cups shredded Pepper Jack cheese (or use Cheddar for a milder version), 8 oz. cream cheese, 1/2 cup plain Greek yogurt and 2 tsp. minced garlic. Cook on low 2-3 hours. Garnish with cherry tomatoes.

    Slow Cooker Pumpkin Mac-and-Cheese
    Active time: 20 minutes Total Time: 2hrs Serves: 12
    12 oz. elbow macaroni
    2 tbsp. butter, melted
    1 tbsp. all-purpose flour
    1/2 tsp. dried thyme
    1/4 tsp. ground nutmeg
    2 cups half-and-half (cream)
    1 cup canned pumpkin (puree)
    1 tbsp. Worcestershire sauce
    3 cups shredded sharp Cheddar cheese, divided.

    1) In large pot of boiling salted water, cook macaroni 5 minutes. Drain and rinse (macaroni won't be tender). In 4-qt. slow cooker, whisk together butter, flour, thyme, nutmeg, 1-1/2 tsp. salt and 1/2 tsp. pepper.

    2) Whisk in half-and-half, canned pumpkin and Worcestershire sauce. Stir in macaroni and 2 cups sharp Cheddar cheese.

    3) Cover slow cooker; cook on low 1 hour until mixture is creamy and slightly thickened. Stir; sprinkle with remaining cheese. Cover; cook 45 minutes until cheese is melted and macaroni is tender. Garnish with pumpkin seeds and thyme sprigs, if desired.

    Chicken Cacciatore
    Active time: 25min Total time: 3-1/2 to 6-1/2 hrs. Serves 4

    8 boneless, skinless chicken thighs (about 2-1/4 lbs)
    1 tsp. dried oregano
    1 tbsp. coconut oil
    1 onion, chopped
    1 red pepper, cut into 1" pieces
    1 (8 oz) pkg. sliced mushrooms
    1 (14.5 oz) diced tomatoes
    1/2 cup chicken broth
    2 tbsp tomato paste
    2 cloves garlic, minced

    Slow cooker version:
    Season chicken with oregano, 1/2 tsp salt and 1/4 tsp pepper. Plate in 6-qt slow cooker. Add remaining ingredients. Cover and cook on low 6-1/2 hours or on high 3 hrs. Serve over zucchini noodles if desired.

    Instant Pot version:
    Season chicken as directed above. Add oil to 6-qt. Instant Pot. Select "saute" function. When oil is hot, add half of chicken; cook until browned, 4-8min., turning once. Repeat with remaining chicken. Select "cancel." Transfer chicken to plate. Add remaining ingredients and 1/2 tsp salt to pot. Add chicken. Lock lid.
    Set to cook on high pressure 12 min. Use quick release.

    Using prepackaged zucchini noodles? They can be simmered right in the stew during the last 10 min. of slow cooking or quickly sauteed in a hot skillet for 2 minutes.

    I have a roast of beef in the slow cooker today! So happy I was on the ball and took it out last night to defrost.
