    I’m roasting turkey breast wrapped in bacon, gravy, mashed potatoes, steamed asparagus and roasted acorn squash slices with a ginger orange glaze. No dessert because we tasted several desserts at a Christmas party last night and not used to eating sweets. We were both so hyper!

    ...I have ground beef thawing to make lasagna but need more noodles, so hoping to get some at the corner store later...

    Tonight will be Ricotta and Spinach Manicotti with Garlic Bread. I made the filling last night using Ricotta, Parm, Mozzarella and various spices, it is in a piping bag in the fridge ready to go.

    I was going to make a Salad to go with it but one store had no lettuce and the other had outrageous prices. I realize there is a Romaine recall but it looked like the first store pulled ALL lettuce and the second looked like they were trying to cash in on the recall as everything has jumped in price since the recall.
    2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

    I’m going to a volunteer appreciation dinner tonight and cocktails start at 4:00, dinner at 5:30, that means dh is on his own for dinner. He can choose between leftover turkey dinner or leftover beef stew. I hope my dinner isn’t turkey tonight, had that last night.

    Yesterday, we had leftover sarma.
    It's like chili and stew, better the second day!

    Tonight he got us takeout - soup was okay but a mix of chicken lemon rice and chicken noodle; veal cutlets, fries, mixed veggies. Oddest thing was someone forgot the garlic in the garlic bread!

    So last night I had dinner at a volunteer appreciation event. While I applaud the nod to the volunteers, the organization missed the boat with the meal. A beautifully decorated banquet hall, lovely prizes and gifts and an awful dinner. Fried chicken that tasted like it came out of a box, bland over cooked vegetables and dessert was an array of supermarket squares. I was disappointed not for myself but for the event organizers as I know they worked very hard to make this a wonderful evening but the catering company let them down. lots of food went into the garbage.

    Leftover sarma - more like a thick soup, but still yummy. I wasn't very hungry at suppertime so I just had a small bowl with a piece of fresh bread.
    Now hours later, I feel better so I had a Mandarin orange and I may try an almond tart.
