Advice on getting meat eater to eat one dinner a week meatless

I swear my dh was born with a tomahawk chop in his hand 😳. He was the biggest meat eater I have ever known... until I passed a kidney stone (found out I have a few left that need to be removed &#129396. I went 100% vegetarian when I found out that when you eat animal protein your kidneys kick into high drive to process/filter it but the same amount of plant protein results in no increase or strain to your kidneys.
I finally got tired of adding chicken, beef, etc to his plates that I said if he wanted meat he had to cook it himself so that was thr end gor him 🤭. Then he felt better, we were WFPB and never looked back.

I also made filling foods he liked without meat. Lots of Indian curries.

Also for us the transition foods like beyond and impossible meats made things a but easier in the beginning.
