    ..making chicken alfredo penne pasta with peas & mushrooms, etc,,,experimenting with my bread maker again lol trying a french loaf today (?)

    Had a mini meat pie that my Mum and sister made-pretty tasty but not as good as I remember my Mum making them when we were kids.

    back on the weight loss thing....( again! ) .....forced to. Dr.'s orders. So my dinner was 3 oz. of sk/bl chx breast that was gently air fried to remain juicy, tossed into the food processor with fresh tarragon leaves, a splash of chx broth , 1 tblsp of mayo, black pepper, grated carrot and fine diced celery.
    The mixture was all mish mashed into torn baby spinach leaves and iceberg lettuce leaves.
    Yummo, surprised myself at the no bread option.

    So far today I have downed 2 full pots of decaf green tea. And so it begins.

    there's leftover pasta from yesterday but there was fresh mussels at the grocery store this morning, so the pasta may have to wait until tomorrow! Cesar salad and garlic bread from the loaf I made yesterday

    One pot creamy mushroom pasta. Made it creamy by blending a can of white beans, garlic and nutritional yeast and a splash of soy creamer. It was sooooooooooogood. Enough leftovers for dinner tonight too!

    last night's dinner was a combo of the clear chx soup I had made for lunch ( loaded with veg ) and some of the 6 bean salad I made that was finally chilled enough to enjoy. Mmmm.

    I got pulled into house stuff and work stuff this morning and forgot about putting something in the slow cooker for dinner. So on to plan b, Mom asked if I wanted pizza and I figure sure why not, I was planning on putting it on next week's meal plan anyways.

    We ended up cooking the roast last night for dinner. I followed most of the recipe but didn't bother with chilling the roast uncovered beforehand. I cooked it at 450 for 15 mins and 325 for 1 hour and 10 mins. The beef was a medium. DH cut up carrots, onions and potatoes and melted margarine in with the veggies... the veggies were nice and moist.

    Made a fab concoction. Spaghetti squash " noodles " with sauteed lean ground turkey basically.
    Rounding it out was fine diced sauteed mushrooms, onions, garlic, and red pepper. Mixed in dry herbs ( dill, basil and a Cool Running's no salt, sugar or msg spice, and black pepper ). To give a bit of moisture to it I stirred in 1/8 c. tomato juice.
    The squash I nuked was quite large so added only half the contents, I'll be making a second batch of this tomorrow for sure.

    Had a super busy and productive day. Went for a walk in the sunshine, loads of laundry done, kitchen cleaned, upper body workout followed by glutes and legs and my first yoga session with peloton with a ride coming up now. So dinner was simple. Smashed roasted mini Cajun potatoes in a wrap with gardein “chicken “ tenders.

    ^ It's been a Yoga weekend here too! But I just do it on my own, no Peloton although I would LOVE to own one! Lots of leftovers from yesterday, the pulled pork turned out yummy. I made a cream cheese dessert with graham cracker crumbs, chocolate pudding, cool whip, etc so lots to enjoy Football Sunday! and apps in the freezer for the air fryer if needed. Have a great Sunday everyone!

    After spending most of the day in the kitchen prepping for the upcoming week I wanted to keep it simple so tonight is Chicken Enchiladas with Homemade Enchilada Sauce. Filling is Shredded Chicken, Peppers, Onions, Mushrooms & Cheddar.
