    Because I am on Spring break I treated myself to a Subway turkey sandwich with loaded veggies and honey mustard with mayo ..will have the leftover for dinner.

    It's the first can of tuna I've had since Jan 20th. This one was just so tasty! A Fairtrade brand iirc, Skipjack and no salt added.
    I stuffed some in the mushroom caps, some in the compari tomato before broiling those, then added some mayo to wrap it up in a Lavash sheet and also for some celery ribs. Boiled egg was a nice add on and soup....gotta have my soup!

    i have been lazy with bringing lunch to work; today i managed to throw a yogurt and pack of ichiban noodles in my lunch bag. Had the yogurt for breakfast. Crumbled the noodles and seasoning packs into my large mug, added some hot water, and i'm having it now for lunch - noodles in a cup

    Pretty decent lunch today.....all about the fresh veg I got on sale. Two x 1 cup portions of creamy soups, one butternut/sweet potato, the other roasted red pepper/cauliflower. Then 3/4 of my plate was piled high with steamed veg, including asparagus, cabbage, spinach, and broccoli. I drizzled 2 tsp melted butter over the whole lot! Dessert was 2 x 5 calorie Jello cups with 3 tblsp of canned whipped topping. Can of Bubly water.
    Just 335 calories for everything.

    I really zonked out after eating lunch today. A cup of roasted red pepper/cauliflower soup, a mini pita filled with turkey breast salad. Sauteed asparagus and mushrooms along with my usual standby, plain hummus and veggies.

    All my yummy soups were gone, so I made a different one this morning! Fish soup.
    To get a yield of 15 x 1 cup servings I was creative. Used 2 cartons of No Salt added Chx broth, 2/3 of a fish bouillon cube and the rest water.
    The seafood's added were scallops, cod fillet, large shrimp and sardines. Veggies were onion, carrot, celery, broccoli, spinach and zucchini.
    Since there is so much sodium in that darn fish bouillon cube, I added only black pepper and Turmeric.
    Each cup registers a measly 41 calories!

    We had the leftover salad with ceaser dressing and homemade tofu feta. It was easy to pull from the fridge so that's what we got

    Free eating day for me here! No counting calories all day!
    We are starting with a beef barley soup ( DH made that ), hoping to hover over the charcuterie board for a while, sip some wine and then dive into the main meal.
    Pork schnitzel, a quinoa/veg mixture ( cumin, tarragon added ), garden salad and a weirdo way to make the corn on the cob on the BBQ. DS gave me the instructions, cut them into slender wedges, brush with mayo, sprinkle with smoked paprika, pepper and BBQ.
    Apparently they are supposed to curl up somewhat on the ends?

    Love your charcuterie board, @walkonby , except for the celery. Weeds. Never touch 'em. Goo for flavoring stuff like dressing, but....well, you know how I feel about celery.😝

    ha ha !! @Lynn49 I KNEW you'd hold your nose regarding the teeny celery sticks I placed in each wee cup of hummus dip.
    I am telling you though , you MUST get your SIL to BBQ up a batch of those Corn On The Cob Riblets! ( see recipe below ) They were the hit of the afternoon.

    Who'd have thunk that these would actually have curled up as they cooked on the BBQ grate? The aesthetic of them was one appeal, but that flavour!! Again, if someone suggested brushing Mayo over a veg and BBQ-ing it I'd think they'd run out of ideas for meals. Wish I'd made more of them, but there is something fun leaving guests wanting more!
