It has been hot here and we keep getting rain right about dinner time which means no BBQing so I have to get creative.
Tuesday night was lets see what I can use up so I pulled an some leftover Beef Roast from the freezer, added Mushrooms, Onions, Carrots, Celery a full carton of broth and some spices and make a semi Shepard Pie base. It was too hot to use the oven so I just reheated some Mashed Potatoes we had and served it over Mashed Potatoes.
Last night I made Caprese Portobello Mushrooms with a Quinoa Salad with Balsamic Dressing to us up some Quinoa and Cucumbers we had in the fridge.
Tonight is a mystery but Mom is off so I am hoping she plans dinner and I can just go home and eat.
