Very Late night getting home from work ..few crackers and piece cheese and Diet Pepsi
...Happy, Happy Friday!!! a lovely day ahead...plan on making an extra large pizza later with lots of toppings (pepperoni, ham, salami, onion, mushroom, bell pepper, pineapple, etc) so there will be leftovers for Miller time later..and a few wings...and I bought these mini individual pies, cherry, blueberry & apple, so cute...and hopefully put a dent in all the Halloween leftovers hee hee (I only got 6 little kiddies)

for dinner. Meeting at our place for drinks then walking to a wonderful little Asian fusion restaurant. There 6 of us and I had to make reservations two weeks ago, because it’s a popular place! Today I made a flourless chocolate torte because one of our friends is gluten free. I’m serving it after dinner with raspberries and whipping cream.
I used Portobello and Button Mushrooms, it was actually made on the stove only took about 30 minutes and that included the simmer time. With that being said I did tweak the recipe slightly to accommodate what I had on hand as well I made it thicker. I found once it was "Done" it was still very thin so I add some Velotine to thicken it up to be more like a Stew vs what I would call a soup.

Tonight is Pizza, although I am so much better than I was I find I am still so tired with this cold and now Mom who was sick before me has gotten worse again and is on antibiotics as well. So no cooking for us tonight.
Leftovers tonight. I had one wing, a piece of Chicken Kiev, rice-a-roni, and corn.
Husband had leftover fried chicken, kolbassa and buns.
Tonight we are going to see the Cheesecake Burlesque show and I’ve not made any dinner plans yet. Most likely the couple going to the show with us will come over for drinks and appies first and then maybe back here afterwards to finish off that chocolate cake I made for company last night.

Made this last night....oh wow what a punch! I used only half the chili powder measurement called for and my mouth was on fire....but in a good way! ha ha
Tenderloin
Ingred: 1-2 1/2 lb pork tenderloins, 1 tblsp oil, 2-3 tblsp fresh lemon, lime or orange juice., 2 tsp Italian seasoning, 1 tsp each of garlic powder, cumin, salt, chili powder, 1/2 tsp smoked paprika, 1/4 tsp black pepper.
Cilantro ( garnish optional )
Instructions: preheat oven 400 degrees, lightly grease baking casserole dish
pierce tenderloins all over with a fork, rub oil onto all sides of the meat
Whisk together seasonings, sprinkle over meat, patting into the surface and sides.
Place in prepared casserole dish, drizzle lemon/lime juices over the top.
Bake for 25-30 min until outside is brown and crispy and centres are cooked through to desired doneness.
Spoon juices over the meat and allow to rest on cutting board for 5-10 min.
Slice into 1 inch pieces. Spoon remaining juices over the slices and garnish with fresh chopped cilantro if desired.
I added plenty of firm fresh white mushrooms sliced up and sprinkled on the bottom of the pan, placing the meat on top of them 15 min.before the pork was done.
My wife said that we have excess of turkeys in one of our frezzers so just did one in the oven last night and had hot turkey sandwiches
Tonight we are making a very small stew using the carcass and what ever meat is left on it
That will leave the rest of the meat for next week lunches and maybe even a dinner
A little late here but I have to agree with KFC last time we got it the breast was cut into 3 and the thighs into 2 pieces there were so small it was ridiculous.
So happy it looks like our Mary Brown's is reopening after catching fire over a year ago. Since they closed KFC and Popeyes has opened in town and I am over KFC's small pieces and have not heard anything good about our Popeyes so have never ventured in.

Tonight will be Homemade Meatloaf, with Mashed Potato Bake which will have Bacon & Cheddar in it, plus some sort of veggie I suggested Roasted Carrots but do not think it will happen so maybe a Salad instead.
I did up a pan of " diet " style Shepherd's Pie. Used extra lean ground beef, a variety of fine chopped ( non starchy ) veggies sauteed and folded into mixture, topped with a layer of creamy mashed cauliflower. No salt, no trans fats. If I didn't know better I would have sworn that was mashed potato on top!

I tried Popeye's in Maine and wasn't impressed with their chicken. It barely had any flavour. Granted, I didn't have the spicy. Wouldn't go there again. Mary Brown's all the way.
Last night was an easy dinner of roast chicken and a Caesar salad.
I had other dinner plans last night but I had thawed a whole chicken and put it in a baking dish with carrots and potatoes. DS loved it and there are leftovers in the fridge for him tonight.
...have a pk of turkey thighs thawing, going to make a NFLD jiggs dinner with all the trimmings (mostly because I need to use up a piece of salt meat in the fridge and the turnip & cabbage before it all spoils)
I’m making a pot of homemade mushroom soup and a taco salad. Another quick dinner because I had volunteer work this morning and spent the afternoon at the hair salon.
