This morning I blended certain leftover roasted veggies ( butternut and acorn squash, sweet spuds, green beans, heirloom carrots, bell peppers ) into a thick soup. I did cheat a little by adding protein. Pulverized bits of turkey and a dollop of DH wonderful gravy in my Magic Bullet.
The leftover eggplant pieces I am saving to eat as is....that tzatziki dip I made goes so well with them.
Wednesday night I made Pasta Bake, I found a package of ground beef that was a little bit freezer burnt so I made a sauce and added carrots, celery & mushrooms (to up the veggies) and let it simmer for about an hour to break down the meat. Then I mixed it with the pasta, added some cheese and baked it off. I severed it with a side Kale Salad
Last night I made Beef Stew with Carrots and Potatoes. Then I made homemade Potato Buns to go with it.
Tonight were supposed to be going out but Mom changed her mind so now I need to make a plan.
..roasting a pork tenderloin, stuffed with apples, mushroom, onion, spinach, breadcrumbs, thyme, spices, etc, covered in a cream of mushroom/cream cheese sauce...and chopped potatoes tossed with EVOO, onion, rosemary, garlic s&p..green peas and whole wheat dinner rolls
going to switch it up a bit with the leftover turkey and do club sandwiches tonight
Tonight we are having Roast Beef with Mashed Potatoes, Gravy and Candied Squash. The choice of Roasted Beef was made as Mom wanted Roasted Beef to make a Sandwich on the homemade Potato Buns I made last night for dinner.
Son is coming over. Husband is making homemade burgers - the guys would be fine with just eating meat, but I may have them make some oven fries, and I will finish the marinated veggies.

finally! I had a salad! It has been 3 days since I've eaten a large one for a meal. Thank goodness the clam shell containers of spring mix kept crisp in the cold room, as the fridge was too full of leftovers.
I went to the store to grab Milk and saw these nice small Peppers on sale and I wanted to go Vegetarian for tonight's dinner, feel like we have had way too much beef lately. So going to make Stuffed Peppers with a Cesar Salad
..last of the turkey, carcass and all is in a pot simmering to make turkey soup & dough boys :-)
We are all sick of turkey at my house tonight, so we ordered in from Pizza Pizza.
Trying to use up some leftovers, I was going to try adding more sauce and re baking the pasta bake that came out dry the other night but honestly I do not feel like pasta.
So instead I am going to make roasted potatoes and cut up leftover Roast Beef and sautee with Mushrooms and Onion and serve on homemade Potato Buns, might also add a little cheese cause when is cheese ever a bad thing.
Picked up a rotisserie chicken and made myself a sandwich.

Turkey wraps tonight, with left over apple cake.
For lunch I decided to try the A&W beyond the meat burger. It looked like meat, but I found it didn't really taste like meat. Not that it was bad, just different than what I'm used to. Has anyone else tried it yet?
I have 2 thick salmon steaks to cook up......but I am just not hungry enough yet.
Wanted to get my last meal in early because I need to get to bed early tonight. No tv distractions.
DH and DD grilled steaks out on our chilly deck and we served them with fried mushrooms, green beans and homemade garlic toast.
Tonight we do appetizers and watch movies for New Years, on this year's menu is:
Shrimp with Cocktail Sauce
Brie with Peach Jam and Crackers
Mexican Wontons
Pork Asian Wontons
Homemade Mozzarella Sticks
I still need to make some sort of dessert, I have puff pastry out, Apples and Ricotta Cheese.
We are just watching the junior hockey game tonight and doing munchy food thru out the night

Its a cold stormy day here, looking forward to the New Years Eve festivities! Hosting a party later...the champagne is on ice...making a variety of finger foods..others are bringing dips & other dishes...I'm making bacon wrapped chicken bites, honey garlic meatballs , wontons stuffed with a sausage mixture and all the rest of the muchie stuff..I have wings and some other oven type of appetizers if I get a bigger crowd than expected....cheers :love:
I made a small buffet of items for the family. We'll be having lots of leftovers.
Beef fried rice, Sweet & sour meatballs, chicken curry, chicken chop suey, beef & broccoli, char siu pork, egg foo yung and baked egg rolls.
Tonight’s supper was baby oranges, fresh sugar snap peas, Ritz crackers, sliced garlic sausage, marble cheese, and sliced pickles. We all enjoyed it without complaint, which says something since our twins are sick.
Late supper today - I had M&M's new pizza rolls with NN crispy skin on fries (my face!).
The pizza rolls were good, love the wrapping they are in. Bought them at half the price they sell for now, though.
Husband had one roll, wants to finish up takeout leftovers from the fridge.

Shake n bake southern chicken - haven't used the bought one in over a decade - I usually a homemade recipe which is great.
Homemade wedges and salad to go with.
We are going to binge watch the series "This is Us" on netflix today so i have already prepared slow baked back ribs and put them in the refrigerator so i can just put them in the oven later and will cut up some vegies later with dip as the side
