Steak, mushrooms and asparagus.
Think I am going to try Marinated Veggies (Zucchini, Mushrooms, Peppers & Onion) with Chicken and Rice for Dinner
..woke up this morning with a mild cold (so far), up EARLY so got out of the freezer a turkey carcass and all the leftover turkey and made soup & doughboys for lunch, will be having the same thing for dinner..
The weather north was not being nice so we came home early. We had picked up some ground beef yesterday so my wife will make a meatloaf with mashed potatoes and corn on the cob
..have ground beef thawing so might make burgers (maybe even bbq) and roasted red potatoes...or maybe lazy cabbage roll hash but not sure if the cabbage is still good so most likely burgers...
Toasted western sandwiches
Hot hamburger, fries, green beans and salad.
Pub Grub!
Last night we tried Steak Sandwiches with Oven Fries and a Cesar Salad. Good news is, it did not upset the side and was something different so I am happy but a dish we still need to limit.
Tonight chicken breasts baked in the oven with green beans. Will make another side for the boys. Probably oven fries.
..the cabbage was okay so I'm making cabbage roll hash and a pan of cream cheese, chocolate chunk brownies :-)
BBQ pork kabobs with rice and blackened mushrooms
Veggie Stir Fry which has Portobellos, Zucchini, Peppers, Broccoli in it, served over Rice
Leftovers would be in order, but I may get inspired
I bought a pack of BLSL chicken breasts and put them in the fridge while normally I would freeze most of them. The first night I made chicken Caesar salad, last night was BBQ chicken with a spicy rub and cauliflower with cheese sauce, tonight is chicken veggie stir fry with rice and tomorrow will be chicken quesadillas. By Saturday we will definitely be ready for a change from chicken-but at least I had all the ingredients for these 4 meals on hand and didn't have to figure out what meat to thaw out each night or run to the store! I am into whatever is easy-so either cooking extra each night to have leftovers or my chicken themed week this week.
Mexican soup
..made cabbage roll hash yesterday and it was good..but, I usually use tomato soup but didn't have any so used tomato sauce and it was a little on the bitter side (not sweet) lots leftover so I'm going to reinvent it with bacon and cheese :-)
My plan for tonight was Marinated Veggies with Chicken over Rice since we did not have that the other night as planned but work seems to be getting in the way. So I am just going to eat up some leftover Chicken Chunks and have those with a Salad.
Out for beers and music.
OK i had wings too.

Went to Costco to grab a few things and the boneless skinless chicken thighs were $4.00 per pack. Grabbed the cheapest pack. Will be able to have some slow cooker meals during the hot summer when we don't want to cook. And cook some sliced up to go on top of lettuce salads and cold pasta salads or even with potato salad.
Mango BBQ pork chops, grilled curry cauliflower and pad thai salad
Tacos
..ribs & baked potato in the oven and will add asparagus later..happy, happy Friday!!
Going to try a Taco Salad tonight, I can only put a small sprinkle of meat on it because it could set my side off but am happy to have something different.
Finally going to try Marinated Veggies with Chicken Chunks over Rice. Hoping the marinate does not set off my side but I am hopeful it won't.
I am finding right now by dinner time I am exhausted and since Mom needed something to take for dinner tonight I made this already so I just need to re heat for dinner tonight.
Stuffed chicken breast, cauliflower and asparagus
Tonight baked pork chops and spinach salad with poppyseeds dressing and Diet Pepsi
..made pizza yesterday, its promising to be a beautiful day so will be bbqing this evening
Pasta Fagioli , pasta with beans doesn't sound nearly as appetizing...
BBQ chicken wings and cut up vegetables with dip
