I am making pork chops in mushroom soup with a shot of worchestersire and garlic and pepper.... cooked with onions and peppers in the dish to keep things simple.... then some country mushroom rice sidekicks to go with it. I like easy meals!

Spaghetti and meat sauce with cheesy garlic bread... Dunno but it seems like that's a popular and frequent choice in our house

I p/u a couple of prime rib roasts when metro had them on sale a couple+ weeks ago, so I think I will spoil myself today and put that in the oven and roast some veggies to go with it and keep it simple..(leftovers for sandwiches!!)

The night before last was a frozen pizza and side salad at DH's request and last night I made lasagna roll ups and topped with my homemade meat sauce . Tonight will be fried rice and some kinda protein like eggs or chicken or edamame beans.

Last night was glazed ham with garlic smashed potatoes and some squash with a sprinkle of brown sugar.
Again another great meal for having no plan (I think it is official that whatever my tummy was doing is over and it wants to go back to 3 meals a day) as well really trying to use up some red potatoes that need to be used.
Tonight I am still working on have a few more potatoes that need to be eaten up but also really wanting some garlic bread. Will have to see how I feel when I get off work.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Two evenings ago, we had cod stew with tomatoes, fennel, and zucchini served over basmati rice (pictured below). It was incredibly delicious! Yesterday was a vegetable stir fry with chicken breast. Tonight's chili dinner has been in the slow cooker since early this morning.

Still no kitchen put together here, so it was takeout last night, but at least from a restaurant, not fast food! I had chicken, home fries, Caesar salad.
Hoping we can get some work done this long weekend so I can be cooking properly next week!
