Fend for ourselves tonight so I had a chicken wrap and father is having spaghetti dessert is carrot cake.
Baked chicken breasts, speghittini, Alfredo sauce, steamed California mixed veggies.
We took a Turkey out to make some more room in our freezer so we will cook this up today. We are not going to do the full Turkey meals with Stuffing and everything but instead will break it down, eat some of it and freeze the rest to be used at a later time. Tonight will Turkey in some form.

We got a amazing deal on boneless, skinless chicken legs so I grabbed a few packages. I have never had them before but I am guessing they are going to somewhat like chicken thighs so we are going to try them tonight in Chicken barley stew.
seems like its turkey or chicken night tonight! I defrosted a turkey yesterday and it is roasting in the oven right now. I used lots of garlic cloves for the turkey with BBQ spices and then smothered the turkey with bacon. Yummy!!! Also i cooked up some cranberry sauce this morning. All this with mashed potatoes and turkey gravy.
So i guess we will be eating turkey for a while: hot turkey sandwiches with home fries; club sandwiches, turkey salad, turkey pot pie; and freezing the carcass in batches to make turkey stock and soup. Now thats stretching a dollar!
i got a big bag of mini eggplants, some will be steamed then stir fried with garlic, ginger, oyster sauce etc. (eggplants soak up oil like sponges when stir fry so if you steam them first then fried you only need a little oil); serve with white rice
the rest of the eggplants will be roasted and go into chicken & eggplants puree for baby

Decided to do my Easter Egg hunt early, which is actually a deep dive into my small freezer...why is the bottom so dang far down?? Found a large whole chicken!! Roasted him up in the Air Fryer, then I just had to cut some fresh cut red spuds in my fancy chip maker thingy...deep fried them.
Another meal for the guys made a day ahead.
Home made sweet and sour pork with rice anc boiled mixed veggies. I hadn’t made it in a couple months.
Hot turkey sandwiches tonight with homefries and peas with lots of sauce.
Tonight we pulled Homemade Burgers from the freezer and will make Oven Fries with leftover Turkey Gravy and I will make a Salad on the side.
So happy we decided on an easy meal as my work meeting went to 5:30 and Mom couldn't stat dinner till we were done as we had no idea when the work meeting would end.
My wife made home made spagetti for tonight

vietnamese summer rolls for myself, mac n cheese for DD#1 and baby food for the other DD :)

..I have all the fixin's for fajitas so going to make those this evening (to use up some peppers & sour cream!)
Even after making plenty of things yesterday, this morning I decided to use up one more box of my Dr. Otekers pastry mix from the stockpile. I think there are 3 left now. Anyways I lined 2 adorable ceramic dishes ( they are white, rectangluar and have handles! ) with the pastry and filled them with a beef stew mixture I made.
Diced up some of the roast beef from yesterday, as well as carrots, sweet onions and spuds. Just pan fried the mixture to pre cook the harder veg. a bit. Dotted a bit of the gravy in each to keep them moist and topped them both with pastry.
Almost done baking....what an aroma.
The family dug into the lasagna last night but there is plenty left to last through the w/e and beyond.

I pulled 2 bags of homemade Bolognese Sauce from the freezer, I will cook up some pasta and turn this into a Pasta Bake with some ooey gooey cheese layers. Will use some of the Bread Mom made yesterday to make a Garlic Parm Bread and I will also make a Cesar Salad on the side.
Will so cook some extra pasta so I can make a Pasta Salad tomorrow to have in the fridge.
