I have a whole Chicken in my fridge I need to use up so I am thinking Hot Chicken Sandwich for Mom and I will just have some Chicken with Gravy and will make some fries in the Air Fryer.
Not going to make a Salad tonight as I have some German Cucumber Salad I made on the weekend I need to eat so that will be the veggie tonight.
Smoked farmer sausage on a baguette.
Fudgesicles and hickory sticks.

I prefer light food for dinner. Baked chicken fillet and vegetable salad. I add olive oil to the salad.
i think flamingo chicken wings with roasted potato chuncks and some corn that i picked up at the Marche Laprairie (farmers market) this morning.

Its a rainy day here so cooking a NFLD jiggs dinner, the salt beef is on the stove simmering and I have a pork roast to go in the oven later...making a blueberry pudding, peas pudding and in the pot later, cabbage, turnip, carrot, potatoes...and gravy!
Thinking I will make a Chicken Parm Sandwich with Salad and maybe some mixed Roasted Veggies on the side
i was too tired to fix dinner so grabbed a ready made lobster and shrimp penne from costco, have had that and i also had a glass of white wine with my dinner.
Quiche lorraine as I bought 2 today and maybe a salad with swiss cheese or maybe a chicken sandwich ..the options are there lol :)
Left over Chinese
Change in plans, Mom was not supposed to be home for dinner but her work schedule changed and now she will be. I told her my plan for dinner which did not appeal to her so she offered to grab a pizza on her way home.
Mom won't be home for dinner tonight so now I am going to turn my Chicken Parm into a Bake, I have combined the Shredded Chicken Parm, Peppers, Mushrooms and Pasta which I will put in a dish and bake off
Much later tonight ( offspring working late so?? ) we will have our mini feast to ring in the Labour Day weekend.
The usual hams and all beef dogs on the BBQ ( getting lazy, will use the propane grill this time) , Saturday I marinated about 5 lbs thin beef rib-let thingys. I used a Korean recipe for the marinade. They will cook fast , they suggest 3 minutes a side, I might do even less.
This morning I made thin even cuts in all the spuds, then fanned it out to drip melted butter and parsley in between the slices. Foil wrapped, will bake those on the BBQ first. Bought a lovely cold large shrimp ring.
Serving carrot/celery/red pepper sticks/strips and will cut up the remainder of the watermelon.
Much later we will enjoy our coffees with fancy pastries from Highland Farms bakery counter. ( Key Lime tarts, Rum Baba and Cannoli )
darn it, I am already hungry! ha ha
Its son-in-law b-day this weekend so we are celebrating. The gang is coming to our house for hot dogs, potato salad, macaroni salad, roasted parmesan cauliflower, homemade pickles, marinated beets, homemade bread and butter pickles. zucchini relish and the usual hot dog thingies (mustard, relish, ketchup, mayonnaise (yep, some of the grandkids put that on hot dogs), onions and cheese.
Dessert will be b-day cake from IGA. Yum Yum!

probably leftover hot dog weiners with leftover potato salad and crudities. Or maybe that will be for lunch, i dont know yet. But whatever it will be, it will include hot dog weiners! lol.
You know, yesterday i roasted 2 head of yellow cauliflower and it all went! I cut up the cauliflower into florets, sprinkled it with olive oil and salt and then sprinkled it with lots of parmizine (spelling) cheese, then roasted at 350F for 45 minutes. Personally i cant stand the smell of that cheese (it stinks like feet) but everyone else loves it so i make it.
Two large deep dish steak and spud pies are baking.....oh Lordy! I BBQ'd the steak first then diced it all up into a mixture, tossed in some commercial canned beef gravy ( Franco American ) to keep everything moist.
hubby made his mom's rice dish (white rice, cheese whiz, ground beef with a sauce consisted of sour cream, Worcestershire, spices) then the casserole goes into the oven. Gonna have mine with some soy sauce.
I had a lot of leftovers on Saturday that I didn't get a chance to eat yesterday so that will be today's supper (leftover jiggs dinner)
