word of advice: those new McCain sweet potato cubes are gross...blech..i roasted them and they don't even look like potatoes...

Went to my aunt's house for Easter supper. We had the traditional turkey supper with the fixings. It was one of my cousin's birthday's today, so we had a DQ icecream cake.
Yesterday I was hosting Easter dinner so I made rack of lamb with a red wine reduction sauce, carrots, basmati rice, Asian salad with a homemade dressing, and for dessert I made Café au lait puddings. I have nooo idea what we are going to have tonight.
last night was ham boiled potaotoes yuck corn broccolli salad and cheese sauce
hubby is making sloppy joe for tonite. This will be the 2nd time I have this. The first time I made it using a recipe I found on the net and I was not impressed.
I am thinking of making dijon crusted halibut, carrots, rice and salad. we'll have to see if I change my mind ;)
No dessert since last night we went to some friends for dinner and had marinated prawns with homeade cocktail sauce, tomato basil soup with parm cheese "cracker"(baked parm cheese), salad, chicken suffed with asapargus, rice and dessert was my homade chocolate pumpkin cake with cream cheese frosting, individual Creme Brulee. Of course there was also fresh Mango margaritta's to wash it all down!!!

wanting something light today... so am thinking of picking up some sole filets which i'll coat in panko bread crumbs with a garlic/herb mixture in it... and perhaps steamed broccoli and whole wheat couscous.. with freshly squeezed lemon juice on top

I'm making the cabbage rolls I should have made on Sunday (we had too much food, so I didn't do them then), to have with ham and sausage we have left, and I'll make a Big Salad.
It's halibut season! The first fresh and wild halibut is in the markets now. I marinate it in lemon juice, olive oil, rosemary and S&P and then broil it like a steak. It's expensive (~$2.39/100gms) so we just have a small portion with veggies and pan fried potatoes. :-)

Tonight is half price wings at the best wing place in town IMO LOL, so bf and I are going for yummy wings! I am positive he will have the Creole Dijon and spicy Thai flavors and I will have my fav maple bbq!
hrm im not sure whats for dinner this evening.... boyfriend will have sheppards pie, for me, im not sure yet...
LOL...with a little luck we will be eating out!!
Tonight i'll either make Sheppard's Pie or Undone Stuffed Pepper Casserole.
Mmmm everything sounds/looks so gooooooooooood! I must admit I especially love the halibut ;). Dinnner last night was so good I feel like making it again :)
