TGIF and happy long week end of easter!!!! :)
gearing up for a fish fry..Happy Good Friday & Easter weekend to all! :bunny:
DH and I put our brains together last night and decided upon a pork loin thing for an Easter dinner, so I'm making up both a Sweet Tea brine to marinate it in and then a Dry Rub.
The Sweet tea marinate will be approx. 6 hrs. in the fridge, then the dry rub goes on, 2 more hours resting in fridge, then slow cooking in a low oven, then a searing in a cast iron pan on all sides.
Last step is pouring the bourbon sauce over.
Quite the process....well there is nothing else going on, we're in another lock down.
We bought a pizza stone and decided to give it a try tonight
Not sure about tonight-maybe Chinese takeout. Tomorrow will be Ham, Potatoes Romanoff, kale salad, baguette and homemade pumpkin pie courtesy of DH. Leftovers for a couple of days after that!
Woke up with an odd craving today, I wanted Pizza but just Pepperoni and Cheese, I want nice crunchy, crispy pepperoni. I think it is because like once maybe twice a year I will treat myself and run out at work and grab a slice but not working in the office no treats so maybe that is why the craving came on.
So homemade pepperoni pizza with a ceasar salad.
I searched all the old threads hoping to find one that had been created for posting desserts on. No luck and I am simply bursting at the seams ( or I will be once I've eaten my fair share of servings from this Trifle ) to post this Easter Trifle!
It only started out as a " junk trifle " meaning whatever I could find in the stockroom/freezer/cupboards to layer it with, but before I knew it I had a theme!
Happy Easter everyone!!

@walkonby : that is awesome!!! :) Good morning to you!!! :)
i got a tray of rib eye steaks on sale at rcss 30% off regular price, so hubby will cook them and i'll make the sides: asparagus, baked potatoes, sautee mushroom and mac 'n cheese. So the little ones have some choices but they will go for the mac 'n cheese for sure.
Here's my 22 months old staring down at my plate:cheesygrin:

ALL that work, the time spent waiting for the marinade ( I let it go for 20 hours! ), then another 3 hours in the dry rub, but it was all worth it.
This is all that is left now.....we polished off one full slab of slices. The bourbon reduction ( sauce ) complimented the chili powder heat. Sides were steamed chunky thick sliced carrots and Stove Top Stuffing.

Had a change of Dinner plans, we were not that hungry come dinner time so instead of the dinner we had planned we opted for Breakfast for Dinner and made Homemade Waffles.
Ham dinner leftovers from last night and I will also make soup with the ham bone.
Fresh salmon filets cooked with citrus and maple sirup glaze, chinese rice with kami sauce and maybe a ceasar or a ranch salad to go with it and my apple brocoli salad and maybe another salad if I make it
Pineapple cake for dessert with whipped cream yum!!! :)
Tonight we will be having Steak with Warm Instant Pot Potato Salad, Sauteed Mushrooms & Onions, Sauteed Corn and maybe some Roasted Carrots and Salad.
I am really craving some veggies right now, lots and lots of veggies.
Stir fry with leftover turkey, home grown bean sprouts and home grown bok choy.
@SnowFlakey : here you go :https://chefcuisto.com/recette/salad...li-delicieuse/
I did not have greek yogurt so I used sour cream and worked great and I did not have any pacanes so it it good without too.Hope you will enjoy like we did!!! :)
Cooking a turkey dinner today, the full "NFLD Cooked Dinner", salt meat, peas pudding, figgy duff, dressing etc..made a pan of chocolate, caramel, oatmeal bars for later and there's a tub of ice cream in the freezer waiting to go with it!! (butterscotch ripple :-))
fried rice with leftover asparagus, chinese sausage, and eggs; well the eggs were not leftover :)
Sausages and rice
Eating makes me hungry, so usually I don't.
As an exception today I bbq'd a spiral ham.
Yes I did burn it but just a little.
Boy, you people need to know everything don't you.
The fridge is bursting with leftovers, so not much cooking today, just reheat and eat!
not 100% sure but I am thinking baked slices ham wih maple sirup, mashed sweet patatoes and pineapple.Dessert plenty of choices!!! :)Happy Monday!!! :)
Decided on Balsamic Chicken with Mushrooms (OH MY I love this dish so yummy) with Mashed Potatoes (have some I need to use up) and on the side I will cook up the last bit of Bean Medley (not to worry I have a new bag in the freezer, but am also very excited to see my Costco has just Green Beans not in the Medley, next time I need Green Beans I will be buying these instead).
DH made the short trek to NF just to grab some cases of bottled water and a couple other things. Funny enough while he was there he found the elusive ( just couldn't find them anywhere ) thick Basa steaks in their freezer bunker!
We have bought them from NF in the past but enjoyed the last bag of them a month ago.
Woo hoo! Now we are stocked up again.
The reason we like these more is fillets tend to fall apart, these sturdy steaks stand up to a robust cooking!
Dinner is Basa steaks tonight!
Really having a bad day today. So dinner is simple. Sliced ham on ciabotta bread with Brie cheese.
I was tired after this afternoon grocery shopping trip and lazy lol so the ham dinner will wait tomorrow.Dad had smoke meat sandwichs, and I had the leftover piece of cooked salmon with maple sirup it was a small piece,2 hards boiled eggs,3 slices of swiss cheese and french baguette with cranberry chicken spread...maybe pineapple cake later ,so wednesday we will have spagetti because I really need to use the peppers and after the pork tenderlion :)
