Trying to clean out the freezers before we move and my wife found some shepherds pie we put in there a couple of months ago
The last couple of nights we have mentioned Fajitas but made something else so tonight we decided to have fajitas but then decided to add a little twist. Instead of just wrapping them in Tortillas we are going to put the Fajita mix in the Quesadillas.
On the side I am making a Salad with Romaine, Cheddar, Tomatoes, Cucumbers & Homemade Ranch Dressing.
It was all pretty darn yummy-stuffed peppers, pork chops and stir fried frozen Costco veggies I had not tried before. We will be eating this for a couple more days yet.
If these are Kirkland Stir Fry Veggies we are now obsessed. I bought a bag on our first pandemic shopping trip where I was trying to stock up on foods we could store. Frozen Veggies were a bit limited in my store and normally would never grab Stir Fry Veggies but due to limited stock I gave them a try and we LOVE them. They are now a staple in our house.
I'm baking a ham today and making scalloped potatoes, macaroni salad, etc....making enough for tomorrow too! and there will be lots of ham leftover for the weekend to make i.e. omelette, pizza, sandwiches, soup. Have a great day everyone!
I really wanted something different for Dinner tonight so I pulled some leftover Ham from the freezer, I will reheat it in the oven and on the side I am making Roasted Parmesan Sweet Potatoes and Roasted Parmesan Brussel Sprouts, I love a little parm on my roasted veggies.
Supper turned out delicious yesterday! Lots of leftovers for today
Still on my kick of wanted different things, so tonight we are having an old favourite we rarely have:
Chicken Fried Steak with Mashed Potatoes, Pan Gravy and Sauteed Corn
A six pack of crumpets.
What? English genes must have snuck into my Irish self.
i made a quick beef enchiladas; they were good but the sauce was a bit too spicy
Mothers day weekend, leaving it up to hubby.
Completely torn apart my living room to reorganize it and move things around, still working on it so Pizza it is.
Tonight ( for Mother's Day ) DH and DS are treating me to dishes from the hot buffet tables of Blue Sky Market. So many options there if you arrive early enough. Plus they have decent California type rolls and some sushi. Mmmm.
I mentioned cooking up the Prime Rib we have in our freezer but Mom did not seem excited about that (I think deep down she is saving it for when we can have dinner with Bro & His GF again) so I pulled out a regular Beef Roast which I will make with Mashed Potatoes, Roasted Baby Carrots & Gravy.
Just bacon sandwiches tonight
leftover for myself since hubby is working this evening and either turkey sandwiches or something else for my girls
Today is a kitchen day! making meatloaf & mashed potatoes, etc for supper....also made earlier dinner rolls, a stock from a turkey carcass and all the ends & bits of veggies in the fridge which will turn into a soup tomorrow, a few dozen chocolate chip cookies for the freezer and also pickled red onion (these are delicious on burgers, sandwiches, etc)
Tonight we are trying a new recipe, Panda Express Copycat Mushroom & Chicken which I will serve over Rice.

I Meal Prepped a Chinese Chicken Salad on the weekend that was supposed to be lunches but we decided it would be tonight's dinner instead. I just need to make the dressing combine everything and dinner will be served.
Change in plans yesterday, work things popped up so I did not get a chance to run out and grab a curbside order so since I was home we had:
BBQ Chicken Wings and BBQ Chicken Caesar wraps with Oven Fries.
Tonight will be the Chinese Chicken Salad.
yesterday I roasted a chicken to make a small dipper of chicken & rice soup with lots of veggies, it turned out really yummy so there's leftovers for today and I'm making homemade burger to try out my pickled red onions ..and there's leftover chicken breast and meatloaf for sandwiches, so lots to choose from!

canned clam chowder....( I am having an issue with my front bridge work....it's loose! ) so no biting into anything until the dentist can work on it. Sigh.....I had to cut my pizza up into small pieces last night, it just took all the fun out of dinner.
I have spent the last 3 days when not working in the kitchen processing my Costco Haul, I am exhausted so tonight keeping it simple:
Hot Dogs with Chips & Dips and some side veggies (baby carrots, celery & got some cucumber poppers on sale)
BBQ burgers tonight
BBQ steak, potatoes, mushrooms and stir fry veggies. We have found that the Costco steaks are quite thick and so we slice them crosswise in half and they cook quite quickly. We can easily share a steak for dinner-or even share half a large one.
DS was at the helm again for making dinner.
I was quite envious of his yeast based flatbread dough, it had doubled easily in size as he took a nap.
Dinner was marinated, then grilled chx breasts, a faux tzatziki sauce, blackened roasted red bell peppers, roasted carrots and lovely freshly pan cooked flatbread.
Such a satisfying meal.
Mr Greek .....it's not you , it's us. We won't be coming back......ever..... as DS flatbreads trump yours.
Instant Pot Lasagna using the Bolognese we made yesterday. On the side we will have Garlic Bread and Caesar Salad.
