I am not sure yet, but between our basement flood which has lead to the rest of the house becoming a disaster (all time focus on the basement, no time for the rest of the house) and the heat that came in this week's heat our dinners have been rather blah, today is the day we turn it back around, just need to come up with a plan.

Decided on Meatloaf with Mac & Cheese & some sort of veggies, thinking either Brussel Sprouts or Green Beans

Flashfood had pack of 4 sweet bbq brochettes(skewers) for 6$ reg 12$ BB today so we bought 1 pack and will have that for supper with patatoes and macaroni salad( it is so rare to see brochettes reduced and I have a craving for those lately so perfect timing,jumped on the opportunity.:top:
Does not feel as warm as they said it would be today so we took advantage of the cooler temp and are making Homemade Pizza with the usual suspects:
Pepperoni, Bacon, Onions, Mushrooms, Cheddar & Parm
@SassyAshley Yum on the homemade pizza dinner! I think I'll have to put all the chopped bell peppers and my bottle of pizza sauce together for a veggie pizza this week! Bro has a handful of Mexican shredded cheese too!
Tonight, I am having T&T pineapple cakes (the entire lot of 8 cakes) and orange juice/Perrier spritzer. I missed dinner so I am hungry!
Leftovers with a romaine salad
There is still some leftover vermicelli ( glass looking ) noodles and the Mongolian beef slices from Sunday, but after I watched a Jamie Oliver 15 minute meal now I want to make up some mini Kofta's, some mini pita's and to top them off he made a yummy creamy sauce from just Greek yogurt, lemon juice and seasoning. Also he had a fragrant couscous as a side dish.
Ambitious but I have no ground lamb....sigh.
I got as far as buying a few of the ingredients to tackle Jamie Oliver's yummy meal, but NF had no ground lamb
so I made a beef stew with dumplings for dinner instead.
PC meat lasagna because it is 4,99$ at provigo member price and I get this price at maxi with my pc card.With a garden salad probably :)
That's exactly what I made yesterday morning! Figured it had been a long time since we had it last, I have way too much ground beef in the freezer and I had tons of peppers/onions/tomatoes that needed to be used up. I was ok just making it and putting it in the freezer. I made up some pasta and delivered dinner to my mom and my youngest that says he doesn't like this pasta sauce had a huge plate!!!
I had some for lunch and it hit the spot!
So weird for us too @Frugalbigmama because that was always DH " go-to " meal he'd make when we had all 3 kids here, especially when they were in their hungry teen years. Now we sure don't require as large a pot these days, yet we still make a full pkg. ( 900 gr ) of whatever pasta, 3-4 jars of sauce, the family pack of gr. beef.
Cleaning out the veggie drawer is easy to do with a pasta, peppers, zucchini, mushrooms.
Funny how your DS claimed he didn't care for a certain sauce,yet gobbled it up! ha ha
I picked up a chicken taco kit and Greek salad kit yesterday at Costco to feed us for a couple of days while DH recovers from hip replacement. Might as well do easy at times like this.

Having a family BBQ tonight, no idea what the main course is but I know everyone was asked to bring a salad and so far on the list we have:

I am thinking I want to make a Grilled Veggie Salad I have found two recipes just need to pick one.
Had this fun idea of making tacos using a package of corn tortillas, as I have never seen these adorable small discs before.
I discussed this with both DS and DH and DS contributed suggestions for how to prep them, what to fill them with while DH flatly said " I find it aggravating to fill a large one, why would i want to play around with a bunch of small ones? "
There it is...... that FLY in the ointment! lol. We'll see if I bother making them now.
Tonight im making something i havent made in years. im making canenoli (spelling) with Ricotta and parmesan cheese, diced fried spinach and all the seasonings. A bit of bottled spagh sauce on the bottom of baking pan, place the canenoli on top and cover with rest of spagh sauce and bake in oven. Last few minutes sprinkle with mozza cheese and broil for crisipiness. Served with some garlic baguette slices. I wanted to make Bruschetta with that but dont feel like it.
@SnowFlakey ty for giving me such a laugh wrt DH negative taco take. I am curious with the Cannelloni that you'll be making
( yummy btw ) . Ar e you buying hard tube shells that you have to boil soft and fill? Or are you using fresh soft pasta?
I ask because I used to always fill those tubes up which can be messy without a piping bag.
But now that I have discovered Oliveri and/or Ole Solo Mio brands of flat fresh lasagna sheets, the task is made simpler!
If you are interested:
First put the full sheets into a pan of boiling water and par boil for 3-4 min. Remove them and keep in a pan of colder water so they stay supple and don't stick.
Next, slice each sheet up into equal rectangles that when filled and rolled up would be about the same size as the tube Cannelloni.
Place filling all along the longer edge, roll to slightly overlap on the other side, making a seam, then seal it with water.
Put each roll into the sauce ( seam side down ) in your cooking pan, when pan is full, top with sauce, cheese etc and bake same as you would the other way.
I have made these a few times now and successfully froze batches of the rolls filled but NOT sauced.
That made them easy to grab, thaw, sauce and bake.

walkonby, i remembered what a problem i had filling the canneloni so i bought the jumbo shells and filled those. They turned out delicious, just like i remembered. I had enough filling for 18 shells. My oinker of a husband had 98filled shells yesterday for dinner and i had 2. and today for lunch, hubby had the rest. Didnt even ask me if i wanted any.
I made a large pot of Borscht this morning and i had a bowl of that for lunch. The rest, im going to freeze for winter. Tonight for dinner, our son and his kids are coming over and im making 3 foot long italian sausages and 8 hamburger steaks with gravy, mashed potatoes and mashed carrots and turnips. And i have a cucumber salad in the fridge that i made this morning.
I have to make something that is easily mashed because granddaughter no.1 had her 4 wisdom teeth extracted Tuesday and also has 2 chains in her mouth to pull down 2 adult teeth that never descended. Her face is swollen, she cant open her mouth much so needs mashed food.

@SnowFlakey that was a great way to solve the stuffing of the tubes......kind of like the famous line from the Jaws movie....you're gonna need a bigger boat! " In your case bigger shells..lol I think those are Manicotti....wonderful that your DH ate so many!
Got to admit that after I posted on here earlier I pulled a tray of 12 Cannelloni from the freezer that I had stuffed with sweet potato and cheese. Got them covered in sauce and baked up before noon but no one was hungry yet.
Now I've already made dinner....herbed sk/bl chx thighs done in the Air Fryer, twice baked & smashed spuds and corn on the cob. So there is lots to have whenever they get around to it. Sleep schedules are messed up again with them.
Having a blah day but trying to get back on track with dinners so I pulled a bag of BBQ Pulled Chicken from the Freezer, we will make Sandwiches and on the side I am making Air Fryer Fries and a Ceasar Salad.
M&M chicken strips. Hubby and I will make wraps with tortillas, lettuce, tomato, cheese and dressing. Our girls will have the strips with fries (rcss cavendish $1.98 - $1 printable coupon).
