Yesterday I cooked a pork roast, mashed potatoes, stuffing, carrots, mashed turnip, green peas, gravy, etc, it was good...but it was even better today leftover after a day of hiking & berry picking :-)
Big sincere thanks to @SassyAshley , after I looked up what French Onion pasta bake was I just had to dive in.

but I replaced the Gorgonzola and Gruyere cheeses with freshly grated Parmesan, extra old white cheddar and Mozzarella.
This recipe was so flavourful probably because of the time spent caramelizing the onions in the wine, then the full 2 cups of sliced mushrooms!
Just delicious.
@walkonby this is the recipe we use too but we also use Parm and either Mozzarella or Provolone, it is so good
Tonight is Caribbean fare. Jerk chicken with rice & peas and coleslaw. Ginger beer to go with that. Yum!
Tonight- BLSL chicken breast, rice, broccoli, corn on the cob and salad. Pick what you want and eat!
Tomorrow night- Roast beef, mashed potatoes, gravy and veggies.
Decided to make Homemade Pizza tonight, it has been awhile since we could make Homemade Pizza due to the hot weather.
The usual suspects will be making an appearance: Pepperoni, Mushrooms, Onions, Bacon, Cheddar and Parm
Will also make a Salad on the side, probably Caesar, I am on a bit of a Caesar binge right now
So weird that very late....... like at 3 a.m. I decided we needed another batch of that French Onion Pasta bake, insuring the remaining gorgeous white mushrooms in the fridge didn't spoil. Also used up the last of the bottle of red wine, coconut milk is now on my grocery list after using the last can.
This time I kicked up the cayenne pepper from 1/4 tsp to just over, but not as much as a 1/2 tsp....DS felt the need to tell me that I had increased it by 50% ! What?? Stop using math to hurt me.
Anyhow, this batch was even yummier ( we all had a small bowl of it hot out the oven ) and we all agreed the additional cayenne was worth it!
Hubby made Chicken Tetrazini for dinner tonight.
We are using up the last of our fresh tomatoes to make a sauce for pasta tonight.
Well SA and WOB-now I have to try the French onion pasta bake too!! If I gain 5 lbs I will hold you both equally responsible! LB
A cold cut Subway sandwich because I was in a hurry to go pick up my new cat Stella!!!! :) Had dinner at 8:30 pm ......lol.......:omg:
Last night was BBQ Chicken Caesar Wraps with Air Fryer Fries so I would have leftover Chicken to bring in my lunch today as I got called in to cover a manager.
I thought the pasta bake was really good-I call it "grown up" mac and cheese. It appears to make 8 very generous servings-so hubby and I will be eating it for a few meals. Thanks SA for the original idea.
Tonight we are having Highliner Pan Sear Wild caught Sole. 2 Fillet Pack. I had the $4.00 off coupon so it was a good deal. Making Mashed potatoes and vegies with that and salad.
I am plum out of ideas for dinner. Good thing there are still leftovers in the fridge. Plus DH had a hankering for some luncheon meat. We now have bologna, corned beef, oven rstd. turkey, and kielbasa chubs...and they go so well on fresh submarine style buns.
I suspect he is going to be sandwiching well into the weekend.

I am super tired and was covering a Manager today so off the meal plan, I need simple and easy so Nachos with Melted Cheese, Homemade Taco Meat and toppings of choice are now on the menu.
Salmon pot pie with homemade chow chow ketchup, macaroni salad dessert of ours choices hahaha!!!! :)
I am not sure...I have a few choices that come in my mind...I will choose tonight..happy friday!!!! :) TGIF!!! :)
Its super warm here today and we have Hurricane Larry barreling towards us expected to hit later tonight. I had the brainy idea of cooking a large beef roast so that there will be leftovers for sandwiches, etc in case we lose the power. it is extremely warm in my house right now, I have all the windows and doors open to let in the breeze (its super windy) but its not helping!!!! Cold Blue Mountains in my future :-) :beer:

This morning my brain finally kicked in and I made a veggie loaded beef steak strip stir fry.
The rice is just finishing in the rice cooker.
I used blade steak that I sliced into thin strips, coated in seasoned flour, sauteed in sesame and regular oil.
Veggies were chunky cuts of 3 colours of bell peppers, slanted cut celery, green onion and carrots, mushroom chunks sauteed crispy, and broccoli florets.
All in the wok according to their cooking times, added fish sauce, soya sauce and rice wine vinegar for some flavours.
My plan for tonight is Steak Sandwiches with Homemade Potato Wedges and probably a salad on the side
I'm thinking a nice burger and sweet potato fries in the air fryer. Bought some to try and if they are good will buy more :)
Fend for myself and the fridge is full so many choices hahaah ,Happy Saturday!!! :)
