I was covering a manager for part of today and well I was gone Mom made Beef Barley Soup using the Bones from the Prime Rib. Originally I was going to make something to use up some peppers but nope Beef Barley Soup with Leftover Potato Buns it was.
SA-I think it is great your Mum can cook during the week while you are working and she is still off.
two casserole dishes of cabbage rolls are simmering away in the oven. I had enough filling to stuff bell peppers too, but sadly not enough energy. Mmmm, the aroma is so inviting in here atm.
@SassyAshley that soup your Mom made up is such a rib sticking bowl of comfort, DH loves that kind as well.
I have some peppers to use up so I think I will make Chicken Fajita Bake and turn it into Chicken Fajita Bowls, simple and should give us some leftovers for lunches
Tonight was a chicken pot pie with homemade fruits ketchup chow chow,zucinni relish and marinated beets(all made by my auntie) with some macaroni salad
With the colder temperature I so need cozy food
This time I did not use Tortillas because I was going to be making Bowls. You could easily but the filling in a Tortilla but then you would need to use a slotted spoon as some liquid does come out of the veggies as they bake.
For the Fajitas I used Chicken Chunks, Sliced Peppers, Sliced Onion and Sliced Mushrooms, I put all of this in a baking dish sprayed with cooking spray. Then added about 1 tbsp of Olive Oil to coat. For spices I added:
1 TBSP Cumin
1/2 TBSP Chili Powder
1/2 tsp each Onion Powder, Garlic Powder & Smoke Paprika
Pinch of Pepper
I baked it at 350 for 20 minutes, took it out topped it with cheese and bake an addition 10 minutes.
I made a batch of Oven Rice which we served the mixture over with some extra cheese and what I call Mexican sauce which is equal parts Plain Yogurt, Sour Cream, a little milk to thin it out and Salsa to taste.
It was super easy to make and quick and easy clean up.
I think tonight I am going to make Slow Cooker Chicken & Potatoes with Garlic and Parmesan. I have some Baby Carrots I need to use up and I am trying to use my Slow Cooker more.
I love my slow cooker but I usually only use them during Meal Prep because when I was working in the office I was gone 10+ hours a day. Now on my work from home days I need to use my slow cooker more as I do not need recipes that can cook for 10+ hours.

I think I will bake some chicken, potatoes and veggies today since I am home.

I think I'll have the chicken pot pie I bought for DH when I was away in BC. I will also have a salad of greens.
Made a potato and beef baked thingy that was pretty good....it was a recipe from the internet, equal amounts of cubed potato & beef, chopped onion, salt & pepper, paprika, and all tossed with olive oil--bake for -50-60 mins until potatoes are done, then top with mozzarella (I used pizza mozzarella) and sprinkle with a bit of oregano and bake until the cheese is melted and a little brown. I also bought a bread maker a few weeks ago so have been experimenting with that, had a fresh loaf to go with dinner, it was sooo good!
I have a pork roast in the oven, having with it the last of the beets from the garden roasted in the oven, carrots, mashed rutabaga, stove top, was going to mash potatoes, but didn't feel like it so fries in the air fryer & gravy. Hoping there will be enough for leftovers for tomorrow! maybe mashed potatoes then

We've all been bouncing between the cabbage rolls, the stuffed peppers and the cooked burgers ( DH did a batch up late on Monday night ), oh yes and eating up the rest of the assorted roasted veggies.

On Tuesday I diligently peeled, then boiled half, roasted the other half of a 5 lb. bag of carrots, so what do you think was the free product giveaway today at NF? Yup a 2 lb bag of carrots....bwahahaha
Decided i had a rough few days (took in a lot of info about my grandchild) so fortinos wings and fries and a side salad it was used $20.00 in P.C points to make the deal sweeter.
Yesterday I wanted something easy and quick so I grabbed a greek pizza with greek patatoes at IGA.It was very tasty :)
Tonight I have the feeling it will be shrimps spring rolls !!! :) TGIF!!!! :) Happy Friday!!! :)
between midnight and 2 a.m. I did up a roast pan of Marc Angelo Mild Italian sausages ( just 6 of them cut into coins ) , added onions and baked at 410 degrees for 40 min. Then tossed in par deep fried chunks of spuds and cooked another 35 min.
It is what we call a potato sausage casserole.
Just simmering a big batch of taco meat. Fend for yourself night!
Could not wait any longer to give the recipe a go @KelJo , despite the fact I could only find a single large ( thick & lean ) boneless pork chop in my freezer. I measured the ingredients to make a 1/4 of the recipe.
So for dinner tonight it will be liver & onions for moi, this one chop is going to be split between the guys.
Sounds like they are getting shortchanged but I modified the recipe a smidge. I sliced through the middle of the chop, S & P and pan seared the outsides only, then placed a crazy amount of stuffing into the middle, tied it up and finished it in the pan in the oven.
Both proteins are done and wrapped up in the fridge, sides I'll do closer to dinner.
Yesterday I made a lasagna for my Mum-which means today I am making one for us.
cabbage soup, hopefully DH will enjoy it too
I have some Zucchinis I need to use up and normally I would make Zucchini Lasagna Roll Ups but they are time consuming and there is no way I can stand that long right now.
So I am trying Zucchini Lasagna Boats again, I liked them last time but Mom was not sold. She said they were too crunchy, so this time I salting them before I bake them and will bake an extra 10 minutes before I add the filling.
On the side I will make Cheesy Garlic Naan and Caesar Salad
Ahhhh, the perfect plan came together....no leftovers.
The guys complimented the way I stuffed the pork chop, ( presentation ) and the ceramic serving dish held 2 layers of slices. All the fixings that accompanied it were more than enough to satisfy.

A friend of mine says she always slices up a cooked chicken breast as most people don't take a whole one if it is sliced-apparently the same for sliced, stuffed pork chops-very clever way to stretch things out for the meat eaters.
ty ladies! We both came from larger families and stretching recipes became a valuable tool in reducing the grocery bills for our parents. I am still just so tickled that it worked out as nicely as it did.
Hmmmm, now what will I make for tomorrow? lol
