Going to make Instant Pot Lazy Lasagna with Cheesy Garlic Naan. So easy plus will give us leftovers, I am all about the leftovers right now
I did promise DS I'd make up a batch of Chickpea/potato curry ( Chana Aloo ) but this morning i woke up with my entire right foot swelled and aching like the dickens. I'm afraid it's day to day for me just like the MLB and NHL players.
Sprayed it with Deep Heat, took Tylenol for Arthritis......such a bummer.
I hear you WOB-last night after work I was hobbling around with a sore toe and ankle-I presume arthritis. So I am having a putzy sort of home day.
Baked potatoes, stuffed with chicken chili and shredded cheddar, topped with sour cream! YUM!
I was sick today so comfort food it is :Bacon Meatloaf with tomatoes sauce on top and mashed patatoes.
Went shopping after work and feeling it (still healing) so easy is needed Homemade Burgers from the Freezer with Oven Fries and maybe some gravy on the side
Thought I'd be a bit helpful and do the Mise en place thing for DS. I placed all the ingredients for the Chana Aloo on the table, but he wanted to measure everything out himself.
Near the end of the cooking, the aroma was really wafting through the house and I called out from the living room how yummy it will be.
Then he walks into the living room looking confused and holding both the recipe and a can of coconut milk, saying " when do I add this in ? " . Silly me, I had placed the can of coconut milk on the table earlier and he thought it was part of the recipe.
Not that I would have minded that in this mixture, always goes nice with curry dishes, but we saved it for another day.

Mom made a Chicken Stew of sorts, it has Chicken, Mushrooms, Carrots & Peas in a Gravy and was served over Mashed Potatoes.
Dinner for one tonight-which easily feeds me for 2-3 meals and is only $12. Gotta love Chinese.
Neither of us are very hungry tonight so just going to make Nachos with Melted Cheese, Homemade Taco Meat and toppings of choice
Late night dinner will be pizzas on Naan bread with thinly sliced BQd chicken breast, spinach, red onion, spicy pizza sauce, bacon bits and mozzarella.

BBQ chicken, potatoes of some sort, Asian salad, garlic bread-cookies and pie for dessert. We have one guest for dinner-hence the dessert.
Mom is making her homemade Copycat Sweet Baby Rays BBQ sauce, smelling it simmer away we decided on BBQ Chicken with Potatoes (TBD what type) and a Veggies (also TBD)
using our last Bq'd chicken breast to make chicken fried rice also having M&M spring rolls they're delish

Made a nice batch of steak and mushroom filling for pie, using my wee individual tins to make 6 up, baking all the Puff pastry tops alone as well as the bottoms first, then filling each with mixture and placing the top layer of Puff crust over.
Had enough leftover pastry to make up a 2 person serving in a ceramic dish, which DS and I taste tested.
The rest of the filling is now frozen.
The 6 pies each fit perfectly into their own round take out container that snaps tight with a lid. The plan is to serve them on Christmas Eve when we have our late night nosh.
Tacos tonight (wow lettuce is getting pricey... I opted for a bagged salad)
Think I am going to make Slow Cooker Balsamic Chicken and then just cook up a bunch of sides, I can make:
Roasted Asparagus
Mashed Butternut Squash
I also have leftover Potatoes in Fridge we can reheat.
we are still enjoying the last servings of lasagna, it stretched far this time because DH is on a salad kick atm. Gulp! The prices for any salad greens is going up. I bought a large clam shell of Spring mix ( those tender baby leaves ) for $3.79 earlier in the week at NF. That was a sale.

and yep lettuce is so pricey now..and everytime I go grocery shopping seems things are always increasing their price... :( ::( :( yuck...
Tonight it will be a little bit of this and a little of that. We have a bowl of rice and stir fry left over from dinner last nigh. We also have an unopened hummus that's close to it's BB date.
For lunch we had a yummy taco salad with the tiniest amount of taco meat, cheese, salsa and thousand island dressing on left over salad. For dessert, we will probably heat up the leftover brownies and top with ice cream.
