Just so tired tonight so mini quiches and mozzarella sticks it is
pork chops & rice
I got some mini tortillas on sale for 50% so I was going to make Mini Baked Tacos but as the sun went down the sinus pressure increased. So instead just did Nachos with melted cheese with homemade taco meat from the freezer and toppings of choice. It is what it is
Made my first batch of poblano peppers and turkey pasta. Mine turned out extra spicy because I misread the ingredients list which called for a single Tblsp of a cumin/chili mixed. I added a full tblsp of each.
Still, it is so darn delicious. ty @Lynn49 for that recipe.
not sure yet-but I just whipped up a pot of cauliflower soup so that will be lunch. Heading over to my SIL's for Scrabble-she has some bread rising so sounds like a lazy, fun day.
Tonight I am going to make Spinach & Ricotta Pasta Bake and probably some Cheesy Garlic Naan on the side.
Gnocci and Bolognese sauce
Last night dinner did not go as planned since Mom had Breakfast @ 3pm, she was not hungry so I just ate a plate of fries.
Tonight will be the Spinach & Ricotta Pasta Bake with Cheesy Garlic Naan
Change in my dinner plans for tonight, I was going to make a Roast which I picked up today but it is not done so quick pivot and instead I made:
Instant Pot Chicken Hibachi over Rice
I boiled up some Schneider's all beef dogs and regretfully succumbed to enjoying one slathered with mustard.
Now my tummy is seriously asking me why I did that? The guys can finish off the rest, they have cast iron stomach linings.
I am making breaded pan fried pork chops and mashed tatie/rutabaga mix.
Tonight I am experimenting with something that I'd love to place on the Christmas dinner table, but the price of those silly cured ready to eat hams has gone nutso so I've been putting it on hold until now!
Managed to catch a bit of a discount this week buying a WM, Great value brand for $10.00. ( that will be the Christmas one )
This morning found a small 550 gram ham hiding near the bottom of a freezer which is fine to use for tonight's practice run.
Anyhow, this is what I'd like to do.
Cut the ham into 1/2" slices and place them in the air-fryer, watching them closely, turning if needed. Removing and placing them on paper towel. Then putting slices of canned pineapple into the air-fryer, same thing watching closely, turn if needed.
The reason is I want these slices to be devoid of as much moisture, without being " dried out ".
Then on a parchment lined baking sheet I will cut circles of phyllo pastry the same circumference as the ham slices, baking them all lightly browned and crispy. I plan to layer the circles of ham, pineapple and baked phyllo circles together with a phyllo circle on both the top and bottom of my tower.
Now I want to lay the roll over and place it on a large uncooked sheet(s) of phyllo, then roll it up!
In my mind this seems like it will be awesome once the outer pastry bakes, browns and crisps up flaky.
I thought it could be an alternative to the same old, same old ham platter with pineapple on the side.
If it works I'll boast and post a pic....if not I'll be licking my wounds and giving myself an " atta girl " for trying.
Update: It's not looking like a success so far, I should have used Puff pastry. I've done this before, mixing the 2 up. Well at least it's all together and waiting to be baked. Just waiting for the guys to be hungry enough for dinner as this is only nice when it's fresh right out of the oven.
Tonight will be fish and veggies-sounds rather healthy!
beef and broccoli over steamed rice
Tonight I will be making Shepherd's Pie with a Mushroom Gravy and on the side I will make Candied Acorn Squash.
I find this Mushroom Gravy I make just takes this dish to the next level.
I am thinking pizza. Have had a craving for days so just going to give in!!
Homemade tomato soup-and whatever else I find in the kitchen!
Tacos and salad for dinner. We use the Don Pancho soft tortillias from the Metro bread section...highly recommend.
We use La Grill taco mix we bought off Amazon (It's a huge container and has saved us money versus the packets).
Some sort of Pork Chops. I was in the office yesterday so I did not make Dinner, Mom took our Pork Chops but when I got home she announced she did not feel like Pork Chops anymore. So we had Roast Beef Sandwiches.
Tonight will now need to be some sort of Pork Chops.
Fast fry steaks, salad and some very frosty perogies in the freezer
Pulled pork in the crockpot-will serve it on fresh baguette and add some carrot sticks and call it dinner.
I have pulled 3 items from the freezer to present as dinner for a couple of days. Two of them hold spaghetti with meat sauce, the third is what remained of a lasagna. These were leftovers from who knows when and I froze them in containers.
Better make some garlic bread to soften the blow. I know the guys love a new fresh meal but we gotta clear out freezer space.
It'll be good.
Two pan-fried beef burgers with smoked paprika and contents of one Tetley green tea bag sprinkled on top. After burgers finished cooking and I removed them, I added one sliced red onion and some sliced stalks of celery going pale to make a sauteed side for the burgers. Yum!
Had a shot glass of bitters (which tastes like ice wine & Ricola candy) too.
@walkonby If you still need puff pastry, use your $1 off PC Products coupon from the print edition Insiders Report (mailed copy or in-store if you find it at an affiliate store) before Nov. 25. PC Puff Pastry is one of the eligible items for the coupon.
Ceasar salad and lasagna
Fast fry steak... I didn't feel like cooking it last night so had taco salad instead.
Tomorrow I'm making vegan chickpea curry with Naan bread
Not feeling my best this evening (thinking it is the meds for sinus infection) we had some leftover pasta in the fridge so I cooked it up with some butter, spices and parm. This has oddly becomes a comfort food for me
Lasagna and garlic toast.
DH has offered to grill steak tonight!!
