nachos. just need something simple. I must have went to bed hungry last night because my tummy was growling at 2am!
Went to Costco today after work and grabbed Wings which we needed plus more Chicken Breasts. So Wings for Mom, BBQ Chicken Caesar Wraps for me and we will both have Oven Fries on the side
We had a big meal for lunch... homemade BQ'd burgers from the freezer with oven fries. We're trying Campbell's potato and bacon soup tonight along with some Ace bakery baguette crisps that are a tad past BB and some Balderson Cheddar cheese
I think we will be eating out at a Mexican restaurant tonight-killing time before our flight home.
I was going to make ribs but changed my mind, hopefully tomorrow! (if we don't lose the power as its stormy here now) I have these super thin pork cutlets that I'm going to bread and make "schnitzel" and fries in the air fryer..there's gravy & dressing leftover from yesterday and some side veggies as well
Stay a bed stew tonight.
I always turns out great.. in case anyone is looking for an old recipe to try:
in a greased casserole dish
1-1.5 lbs of stewing beef
3-4 potatoes chopped
sliced 2-3 carrots
1 onion diced
frozen peas
Campbell's condensed mushroom soup (you can use tomato as well)
about a 1/3 c water
Mix soup into stew
1 bay leaf (I normally put it in the centre of the casserole dish so I can find it)
salt and pepper
Cover with foil (or if you still have your glass lid, even better)
275 degrees for 5 to 6 hours
It's a family fav
Got home after Grocery Shopping a little later than expected so we just had Hot Dogs.
Thinking some sort of Pasta but need to see if I can find some sauce. On my to-do-list for this week was to make more Pasta Sauce so will have to see if there is any left in the freezers.
Panini Press got used. DH and I opted for aged cheddar and sliced Cajun Chx breast meat for our sammy dinner.
Fresh fruit accompanied. ( chunks of watermelon, Bartlett pear and slices of banana )
NO beer was drank during the Grey Cup here....as DH was working on the shower tiles and need his brain sharp!
..made spaghetti yesterday, and it was delish! Lots of leftovers for today! easy kitchen day :-)
We had chicken quesdillias last night using left over chicken thigh meat.
Tonight we'll do the mashed potato with gravy and left over pork tenderloin and some frozen peas.

On the 13th I made my best ever version of a chx soup with rice. Used the large chx quarter legs this time for the initial simmer. Just basic onion, large celery butt wrapped and tied in cheesecloth , S & P, to get the pot going to a rumble.
Once the chx softens all the way I remove the celery butt and the chx legs to cool and pick just the good meat out.
Add carrots, green onion tops, fresh sliced celery and a large sweet potato ( diced).
Tossed in the 2 cups cooked Basmati rice, added back the meat chunks, then carton broth to bring the liquid level back. This time I also added some of that chx powder stock.
Maybe that stuff made this extra tasty?
We've been souping steady since Monday! lol.
Yesterday i baked a small ham, loaded baked potato and asparagus. Tonight will be leftover ham, fried eggs with asparagus.
Tonight we are having BLSL chicken breast and garlic shrimp, green beans, mushrooms with onion and ceaser salad.
Breaded pan fried pork chops, Mashed potatoes and steamed cabbage-seems like a comfort meal for a chilly day.

Went grocery shopping today and I was cleaning out the fridge I saw we had some older onions and mushrooms to use up. French Onion Pasta Bake was the obvious choice as it uses both Onions & Mushrooms. I will probably also make a Caesar Salad to go with it as I have some lettuce to use up too.
Love nights like these were we can use things up before they would have to be tossed.
Pressure cooked 2 small trays of bite sized diced blade steak with onions, raspberry vinaigrette dressing, soy sauce and red wine for 25 min at med pressure. Removed all meat/onions from pot once soft added in carrots, celery and spuds. less than 6 minutes, they're done.
Added meat/onions back into pot, then filled 2 Tender flake pie crusts heaping full, covered with 2 more top crusts.
Baked at 350 for 35 min.
Such a simple method. No sides needed, a complete meal.
I picked up samosas from our butcher today. They were tasty.
We had canned corn as well. I haven't had as much luck with frozen corn lately (tough and frosty) so it was nice to have a "fresher" taste.
On Wednesday I made a large cabbage roll casserole, there was enough for leftovers yesterday and froze 2 containers for later, not sure today. We have a storm moving in this afternoon so I'm going out this morning to do my last minute BIG Christmas shop (I live in a small place so if I don't get what I need now it won't be available in a few days!) Maybe make a pizza or takeout if its not too stormy later.
We have friends coming for dinner and a sleepover tonight. They are renovating their house so we're having monthly dinners here.
My friend is bringing homemade lasagna and caesar salad
I'm baking buns (I use the breadmaker for the dough) and brownies (I'll heat them and top with ice cream)
Tomorrow morning, they want to head off quickly so I'm making bran muffins, hard boiled eggs and fruit
I am thinking Homemade Pizza night, thinking Friday night Pizza and maybe a Movie on Netflix

I am impressed it is lunch time and we have decided on Dinner. Lately dinner has been that nagging questions, I am feeling burnt out so by dinner time I am done and want easy.
Tonight will be Meatloaf (pulled from the freezer), mashed potatoes and a veggie (TBD). I am thinking Roasted Butternut Squash and maybe some Brussel Sprouts too.
